I really appreciate your channel bc you are honest about off flavors in the finished beers. Something I would really appreciate is your homebrew yeast tier list. I am burning through your library of videos trying to sponge up as much knowledge as I can haha
@@SomeGuy-dc4ey thanks! I usually use Lallemand dry yeast, or safale. I only use liquid if i am looking for a special type. Out here it's Imperial or Wyeast
US-05 or Nottingham - they both will dry it out without the apple funkiness of S-04. ESB is english version of "beer flavored beer"...it's darker than American ale, but has much of the same profile to me. It also tends to be lower ABV so you can have a long session without ill effects. Cheers!
I might have had the same issue with that yeast. It's probably why I dumped a 5 gallon batch.😡 At least the color and carbonation look good. I hope mine fairs well! I already made one but used a different yeast.
Interesting that you got off flavours from S-04. What temp did you ferment? I really like S-04, I just wish it was more estery. Never had a bad batch with it!
I also had inconsistent results with beers with S04 half of the time when homebrewing and interestingly I now work in a brewery that uses the strain on some of the speciality beers and it works well ! So my guess is that tight temperature control and knowledge on this strain is necessary !

For the grain bill, you said Maris Otter and Crystal. When milling the grain, you mentioned oats. Is there oats in this?
There is about 5% oats in all my beers for head retention and mouthfeel. I use oats in place a dextrin malt
