Originally from Chikmagalur, Lijjo Joy Kasper was introduced to the world of pizzas a decade ago during a stint in an Italian kitchen. Since then, pizzas have become centrestage for this young chef, obsessing over the right mix of flour, fermentation techniques, a zesty tomato sauce that employs both Italian and naati (country) tomatoes in a sweet, spicy and sour mix, to topping combinations that are rooted in the classic but have flavourful tweaks. A year ago, his pizza passion found home in a tiny 300 s.ft. pizzeria in Koramangala, South Bengaluru where he alongside his brother and wife dish out, through a curbside store window, an impressive range of sourdough pizzas and sandwiches. I caught him by surprise one evening when I visited to taste six of Fermentation Stories’ popular pizza combinations.

We were frequent visitors of Cafe Agape, which was run by the same team in Chikmagalur. The taste of food was just amazing, especially the pasta. I have tried a lot of pasta in the UK, but his was just amazing. I am glad the team moved to Bengaluru as their talent was wasted in Chikmagalur. "Someone's loss is another's gain." This is why Food Lovers tv rocks as they bring out raw talent.

I remember visiting cafe agape Chikmagalur in jan 2021 and being blown away by the taste of it's pizzas that too in Chikmagalur. It would be fair to say we were left Gaping😊. Will def order from here when in Bangalore.

Interesting right... you don't expect gloves for Idli / Dosa when you go to a darshini.. but expect gloves the moment it is a pizzeria and is in K'Mangala 🙂
It's all about skin colour for them. If the same pizza was made in Naples or rome by a European white guy with out gloves it's very hygienic for them😅

One of our favourite pizza places to have in Bangalore...also garlic bread is yummy .....better than dominoz. Tried atleast 5 times and always recommend to my friends to visit this place.

Just a tip for Mr.Lijo use scissors to cut your pizza so the crust stays airy and you can see the fermentation ❤

Even Gustoso doesn't have a pizza for 1200, so yeah, no. These are amazing prices but smaller pizzeria's ain't that expensive, Queens Margherita for example.

Dear Chef Lijjo, I'm wondering instead of simmering the tomato sauce, perhaps you could place it in a wide tray/receptacle and put it into the oven when it's empty or not fully utilised. The residual heat will evaporate/reduce the sauce thereby perhaps saving you time, fuel and stove space.
As for the pesto, do consider experimenting with lightly toasted cashews along with a tiny number of candlenuts (they make a great thickener). If you need fat, then lightly fry the nuts instead of toasting.

pizza pizza. Looks like brick oven pizza!! I love the loaded pizzas but do not eat pesto outside because of pine nuts or walnuts. I use roasted pumpkin seeds to make pesto at home.
