So this is only pressed by water pressure? How many psi can that be, 60 70?

You left off the stainless steel washer which goes on the spindle before the clamping nut is installed. There is a very good reason for it to be there. I hope your press lasts! But if the cast iron lid cracks on you, you were warned!
Also you said nothing of the size of the pulp to be pressed. It is critical!
You should have put what was strained from pouring out what was draining from just filling the press, should have been placed into the press.
You have a lot to learn about proper usage of a press!
