Why don’t you center your hands so that people that have vision problems can see what you are doing? When you slightly move the video you hands are not centered.
At my age now to find out that you can knit this way. Very impressive

Yes. For each color you would need the full amount of yarn needed for your project.

I un'stood the stitch but struggle to yarn over each time with L hand. Not used to L hand. It took a long time 4 me 2 finish the 1st row.
It does take some time to get used to holding the yarn in your left hand. After a bit it will become more natural.
