I don't understand why hair stylist do roller set and then brush it out and flat iron the hair and curl it again

It's easier that blowdrying it by hand... I mean I love my hair but I just be looking at these roller sets thinking if I'm knew about this when I was younger my I would have... Man.... Because it's so cute like without it being manipulated with the straightning iron... It's better than a wash and go
