Making this for dinner. I usually add essential wheat gluten to the meatball mix because it give is a juicy, chewy, elastic texture that really mimicks minced meat. A real game changer.

They were delicious although I thought the lingonberry sauce was a weird addition to a savory dish. Now I'm looking forward to making this recipe because I know I'm gonna crave it.

the Ikeas have been closed in the US so I haven't been able to buy lingonberry jam there. It sounds weird but the best way I could approximate the same flavor was to make a cranberry sauce with raspberries added to it during the cooking! I used about equal parts of both berries. (I did also buy some lingonberry jam on Amazon eventually but it was quite expensive). Looking forward to making this recipe!!

caramelised shallot stock concentrate- what would be a substitute?...
Some sort of strong boullion paste or fond with onion or shallots as the main flavour. You could also use a good quality onion or shallot stock cube 😊
