- These golden bottom veggie potstickers are the BEST! They have a crispy bottom layer and the filling is super flavorful. I called them 'golden bottom' to celebrate the upcoming Lunar New Year for all the sparkly and fun celebrations!

Ingredients
40-50 dumpling wrappers, thawed if frozen
1 round eggplant about 1 lb
1¼ cup green beans (measured before cut)
8 oz crimini mushrooms
7 oz firm tofu drained
1 tablespoon minced ginger
¼ teaspoon salt see notes
½ teaspoon sugar
2 tablespoons light soy sauce or to taste
a few dashes of white pepper
1 teaspoon miso yellow or white
sesame oil
2 tablespoons cake flour or corn starch plus more for dusting
cooking oil
water

You can substitute the short green bean with Chinese water chestnut (Ma Tai) for the crunchy texture when biting. I guess Woon Heng put a short green bean for its green color mixture inside the dumpling. Oh hungry already when I saw that wonderful color combination ingredient. Spicy 'sambal belacan' on the side please.

When making the wrappers you say hot water is better (Gluten) but you don't say how hot. I am guessing it's not boiling which would gelatinize the starch, but is there an ideal thermal regime? Maybe a temperature that the mixed dough should hit?
