Directions 1. Prepare all the vegetables by washing and chopping them as described. Slice the tofu and set these ingredients aside. 2. In a small bowl, mix together the gochujang, gochugaru, mirin, sesame oil, onion salt and soy sauce. Set aside. 3. In a large pan, add the minced garlic, and grated ginger. Heat a splash of oil in a small saucepan over medium heat and pour over the minced garlic and ginger. 4. In the same pan, arrange the sliced shiitake mushrooms, sliced tofu, chopped kimchi, edamame, enoki mushrooms, sliced heart of palm sticks, butter beans, any other veg you desire into the pan. Pour the prepared sauce mixture into the middle over the arranged ingredients. 5. Pour the ramen broth + water over the ingredients in the pot until everything is covered. You can use half broth, half water. Heat the pan on the stove and bring the mixture to a simmer. Allow it to cook for about 5-8 minutes. 6. Add the noodles to the pot and cook according to the noodle package instructions or until they are soft and cooked through. 7. Once the noodles are cooked, remove the saucepan from the heat. 8. Garnish the stew with chopped spring onions and, if desired, sesame seeds. Serve hot and enjoy!

Ingredients
🌱80g yellow pea noodles 🍜(or a ramen pack)
🌱1 tbsp grated ginger
🌱2 garlic cloves, minced
🌱1/2 cup edamame, chopped
🌱1/4 cup shiitake mushrooms, sliced
🌱1/4 cup butter beans
🌱1/4 cup kimchi, chopped
🌱150g enoki mushrooms
🌱200g extra firm tofu, sliced
🌱2 heart of palm sticks, sliced (optional)
🌱2 tbsp gochujang (Korean red chilli paste)
🌱1 tbsp gochugaru (Korean red chilli flakes)
🌱2 tbsp soy sauce
🌱2 tbsp sesame oil
🌱1 tbsp mirin

🌱1-2 nori sheets
🌱ramen broth + hot water
🌱Sesame seeds for garnish (optional)
