My mother side of the family is from Bamban, Tarlac, pure kapangpangan. She used to make this on a clay pot with tamarind leaves. I've tried copying her recipe but it's not as good as hers. Yes,Tarlac is very underated.
I ate pinaupong manok in Asturias, Cebu. It was more like a tinola i think, but boiled at least 6 hrs. But the focus of our topic while eating was how my Grandma new we were coming that when we got there the food was ready to serve. Note that we don't have contact with them for years and that trip was just a spur of the moment.

Suggestion: Try to discover the rustic dish of hito or kanduli, stewed in curry (gata, luyang dilaw or turmeric, shallots, etc), and alagao leaves. That's just a general description. It's a common dish among the provinces of Bulacan, Pampanga, Tarlac, Nueva Ecija, etc. So, expect variations of the same theme, from province to province. However, Pampangos strongly claim the dish originated from them. The usual name of the dish in Pampango is "lagat hitu", or nilagat na hito in Bulacan. But I've seen descriptions on UA-cam like "inadobo sa gata at dahon ng alagao". Alagao, usually used as an herbal medicine, is surprisingly impressive in this particular dish.

I don't know why but I love the gloomy weather when this video was shot. It adds a nostalgic and homey feeling. Mad props to the production! This was filmed and edited so great that it feels like it should be aired in a lifestyle channel.

Hi Erwan, the pinaupong Manok which i think is older than this recipe is also good. You get to seat the chicken in a lot of salt then cooked in a Palayok. No need to fry it! But this is also a nice take in the recipe.😀
Yes. I remembered my nanay used to cook Pinaupuang Manok. I would often watch as she would literally have the whole dressed chicken sit on an inverted almeres drenched in salt inside a big kaldero. Super tagal maluto but when its fully cooked, super sarap, meat is so tender, salty yet delicious. Miss my mom's cooking.
