This pork panang curry looks onolicious with white Japanese rice or jasmine rice, maybe some Mac salad (Hawaii local staple) on the side. I don’t think I’ve seen that pea size egg plant, need ask some Thai ladies. I’ve only seek coconut milk in cans here, and usually it’s one big lump on the bottom of the can. Cooking in Thailand that is my best experience, walking thru garden pickin up ingredients also going to market get meat, than cooking in friendly Thai Baipai School. Best Memories
Horapa is 'Thai Sweet basil' used a lot in green curryes (Gaeng Khiaow Wan) and other dishes Grapao is 'Thai Holy Basil' the stuff used in the spicy Phad Grapao dishes Both taste and smell good to me, but very different. Grapao hard to get/expensive in some western countries, very fragile and only keeps well for a few days.

You can't add all the coconut milk at once because it makes the temperature drop in the wok and the food stops cooking. By adding a little at the time in keeps it hot and it keeps cooking.
