Cut notches/slots on top of chimney about 1/2 " down till the grate slides in as a place holder.

I do this all the time and I have to make one important suggestion: If you don't have some type of welding or heat resistant glove, get a cheap pair of cowhide leather ones at Walmart or Home Depot, etc. so you can grab that grate if need be. You never know when a steak might stick just enough to knock that grate off. With a glove on one hand, you can easily pull the grate off if you get an insane flair up (although you really shouldn't as you only need half a chimney or less of charcoal to do this).

This is how i sear after i sous vide my steaks or burgers. Works perfect everytime! Great after smoking a steak on my recteq. I hated wasting lots of charcoal just to sear, and this help cut the charcoal use down. I hate wasting a good fire. lol.

Alton Brown used to sear tuna on the chimney. Good job managing the heat/sear

One trick I use for handling a hot grate is to keep a pair of cheap pliers handy.....Hell of a lot more solid than using tongs!! Those steaks look great!

Cool idea! I'm thinking two chimneys, steaks for two. Super simple. Thanks 👍
