Thank you for your question. The desired consistency for risotto is creamy, loose, and porridge-like. That's why we cook the rice adding a little bit of liquid at a time, to draw out the starch. Cooking the rice in a rice cooker won't achieve that consistency. Give this a try! Happy cooking.

Great question! Yes, you maybe use chicken broth in this recipe. Be sure to taste the broth and the risotto to see if you need to adjust the seasonings. Happy cooking!

I made a nice dish full it was okay but don't know had nothing compare it too, my rice was not as white as your sample
why you just dint use the bacon grass in the rissotto
Thanks for your question, rafael osvaldo geraldo celado. The bacon grease is quite greasy and would overwhelm the rice flavor, plus make the rice look "dirty." Feel free to try it though, if you'd like to.

i honestly dont get the point of this recipe, it' s plain risotto with bacon bits, but its not a real risotto because it' s meant to be combined with other ingredients in order to get some flavours a part from parmesan cheese and butter
CosGaulo It reminds me of carbonara but using rice starch for the creaminess instead of egg.
