    2 tablespoons coriander powder
    2 tablespoons cumin powder

    Fresh coriander leaves, chopped for garnish
    Fresh ginger, julienned for garnish
    Fresh lemon wedges, for serving
    Instructions:
    1. Prepare the Mutton: Wash the mutton pieces thoroughly and drain excess water.
    2. Cooking the Mutton: Heat ghee or oil in a large karahi or deep frying pan over medium heat. Add chopped onions and sauté until golden brown.
    3. Add Ginger-Garlic Paste and Green Chilies: Add ginger-garlic paste and chopped green chilies. Sauté for a couple of minutes until fragrant.
    4. Add Spices: Add cumin seeds, coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Mix well and cook for a few minutes until the spices are roasted and oil starts to separate.
    5. Cook Mutton: Add the mutton pieces to the spice mixture. Increase the heat to medium-high and stir-fry the mutton for about 10-15 minutes until it changes color and starts to brown slightly.
    6. Add Tomatoes: Add chopped tomatoes to the mutton. Mix well and cook until tomatoes are softened and oil starts to separate from the masala.
    7. Simmer: Reduce the heat to low, cover the karahi with a lid, and let the mutton cook in its own juices for about 1.5 to 2 hours or until the mutton is tender. Stir occasionally and add a little water if necessary to prevent sticking. Cooking time may vary depending on the size of mutton pieces and the tenderness of the meat.
    8. Final Touch: Once the mutton is cooked through and tender, check for seasoning and adjust salt and spice levels if needed. Garnish with chopped fresh coriander leaves and julienned ginger.
    9. Serve: Serve hot with naan, roti, or rice. Squeeze fresh lemon juice over the mutton karahi before serving for added freshness.
