  • I'm not ashamed to say it, Taco Bell is my favorite fast food. My favorite item is the cheesy gordita crunch and today we are making them homemade.     I absolutely love that you can appreciate fast food for what it is. As much as I like learning from other food channels, they tend to have an air of arrogance towards it. Plus Taco Bell's my fave too.. as if we all don't need a midnight taco once in awhile.

    Taco Bell should just be called “The Cheesy Gordita Crunch Store” because it’s easily the greatest item on the menu and it’s all I order.... ok that’s a lie I get the quesadillas too....and some other stuff...

      It does cause issues in some people, but it's those with certain existing conditions or a sensitivity to glutamate. Some people even get headaches or diarrhea from tomato sauce, which is a natural source. I think it is something those who feel ill effects should avoid, but anyone who doesn't feel issues can consume it as they like.

    With MSG, you can find it anywhere (even Walmart) but because there’s a huge stigma around it they don’t really advertise it as MSG. You kinda have to look around the bottle, usually the ingredient list. They’re typically marketed as a sodium free substitution for salt. Accent is the company that sells it at my Walmart.

    Glad to see I’m not the only who appreciates the amazingness that is the cheesy Gordita crunch. While it’s my favorite tasting item at Taco Bell since I’ve been trying to eat healthier i now only get it on days when I’m really wanting to indulge myself. Now my regular order is the chicken power bowl which fills me up and is only around 500 calories. I’d normally need at least 2 cheesy Gordita crunches to feel full and they’re 500 calories each.

    Great videos so far. One point: the windowpane test ist not "the key to see whether the flour is hydrated or not". As the name says, it indicates that the gluten strands have formed a strong enough protein network.

      Gluten development is a result of hydrating flour, not by kneading, so effectively the windowpane test can be used to check flour hydration or gluten development.

    I cook down yellow onion, green and red peppers and then add my grnd beef when I make taco meat. It adds flavor, color, texture and volume.

    The chalupa shell isn't grilled bread like in this vid, it's frybread. Easy to make at home too just search "Indian Tacos"

    Good vid, Ethan! I gotta find some of those peppers. One variant I prefer over the pita is a fresh flour tortilla. I put the cheese on the griddle then lay a warm four tortilla on top, then flip for the crunchy fresh corn tortilla to be sweetly caressed by the melty cheese.

    Help! Your written recipe says 3g yeast but you say 4g in the video; which is it? Also, your written recipe says to ‘add the olive oil’ but there is no amount given and I’m not seeing it in the video.
    And do you use AP flour?

      Update: I made the flatbread with 4g yeast, AP flour, and no olive oil. It definitely needs some oil because the dough had a tougher chew than I was expecting

    I use venison-chorizo sausage meat instead of beef, and I top also with a veggie taco mixture (tomatoes/beans/peppers cooked down to a paste and seasoned). That's my secret to gorditas lol

    Gotta add tomatoe sauce ti the beef to make it more taco help beef, and as for the cardboard stale taco shells yoi got as heat them up in the oven before you eat them. That's what taco belle and sell taco does.

    You can just use a gordita instead of a flatbread. The premixed bags of flour for flour tortillas work well. Not the masa.
    I find that using yeast isn't really necessary. And a gordita is just flatbread without yeast

    How about, make your beef, go to store and buy flatbread, buy a bag of Dorito’s or Tostitos for the crunch factor, get a bottle of Kraft Ranch dressing, mix a little Frank’s Redhot or cayenne powder with a little chili pepper powder into it. Any homemade bread tastes better when proofing it in the fridge for a minimum of 48 hours. Just like when you make coleslaw, a day or two of soaking up all the ingredients make’s it taste waaay better. Never forget to put cumin into your meat marinade, it “is” the smell and taste of Taco Bell and any food that is Mexican. I have another hack, to make ground beef super tender and melt in your mouth like the restaurant’s.

    I like just for taste not spicy that will be hot, burning, etc so I would just sprinkle & not sure of black pepper. I hate the stuff, but sometimes sprinkled on stuff is what makes arecipe. As long as not have to taste it or gives me a spicy bite . What of you don't have a cast iron cookie sheet or gas stove ? Can you toaster oven it or electric fry pan ?

    Next time you have a cheesey Gordita crunch, ADD creamy jalapeño sauce to it. But obviously leave the spicy ranch as well. GREATEST THING EVER. I think about it every time I drive by a Taco Bell. It’s the only way I eat them now. (Unless they forget the creamy jalapeño sauce and I left already)

    I'm confused by the recipe in the link. In the flatbread portion, it doesn't list olive oil as an ingredient, but it says add flour salt and olive oil in the directions. The video doesn't show olive oil either; I just wanted to make sure it wasn't actually needed.
