I appreciate your application for Italian food! I feel like Spaniards and Italians are cousins! :)
Yes! Much love :)
You should get a Food Network show. Your look, voice and mannerisms as well as how you make every recipe approachable makes me return to your channel repeatedly.
Appreciate the comment! Much love :)
@@SpainonaForkNo, they would stifle you! 😎
I have a recipe similar to this using pine nuts, I'm going to try it next time with the almonds. I love pasta and as always looks delicious, everytime I see a recipe from you I want to make it immediately. 😀
Much love :)
try pistachios
@@richardgalli7262 I do love pistachios, that's definitely worth a try. Thanks for a new idea.
@@charlottekearn5185 I use pistachios exclusively when making pesto with fresh basil, but they are pricey now.
OMG!!! I AM so making this for dinner tonight! I turned myself off pesto years ago as I overdosed on it and from then on cannot stomach pine nuts! Using almonds, now that HAS to taste amazing!! I have to give you a humongous THANK YOU Albert! For about 20yrs I suffered an eating disorder and even though I had been "cured" (as the Dr put it) I have found it very hard to eat normally, if at all. I have been a Type 1 Diabetic since I was 7 (so 34yrs) and because I have found it so hard for so long to eat normally I have severe hypoglycaemia (low blood sugars), sometimes leading to seizures and unconsciousness and LOTS of trips to hospital! But since I found your channel and watched every single episode, you have given me confidence in overcoming my fear of eating, especially carbohydrates, which are very important in a Type 1 Diabetic diet! It's not that I don't like food, I LOVE food and I LOVE cooking, and your recipes are so easy to follow, easy to make, nutritious and, most importantly, DELICIOUS!! I still have a long way to go to have a "normal" eating regime, but because of your inspiration I am definitely on the right track! So thank you once again for giving me, first, the inspiration and excitement to head back into the kitchen and, second, the fact that I'm eating carbs again, I'm having a lot less very low blood sugars! I keep saying it, because it's true, YOU ARE AWESOME ALBERT! Hope you and your fam have a wonderful weekend and stay safe!
I am so happy to hear that!!! Much love :)
I'm excited for this new series Albert! Keen to see your take on various regional dishes :)
Much love :)
Hey Albert this is a good variation on classic pesto. Thanks
Much love :)
Love your recipes and the way you present it. So calming. Thank you.

This recipe ticks many boxes for my "keeper" recipes. I love your channel
Much love :)
Thank you for this nice recipe. I never met my grandfather, he was from Trapani, I'm going to try making this!
Sounds great! Much love :)
I tried this recipe and just added a few cashews to the sauce and some capsicum and broccoli to the pasta. Indeed pesto alla trapanese is the best pasta ever! Thank you!
Sounds great! Much love :)
Looks amazing. I will tryout recipe this weekend
Hope you enjoy! Much love :)
Albert: *_I❤PASTA!!!_* Delicious! This one is certainly a WILL-make. I'm off today for some (more) almonds and
FRESH basil. Thanks again! (Fan from San Francisco, California.) *!!~
Yes! Much love :)
This was an awesome video. Keep it up!!

+1 for the Apollo Olive Oil. Their oil has the highest polyphenol content I have ever seen -- it's IMO too strong for salads, BUT if you make a crispy focaccia with sharp cheese and dried tomato and herbs, a drizzle of it completely transforms the result. It's also great drizzled on a spicy Neapolitan pizza.
This is a favorite of mine in the summer. You don't have to heat up the entire kitchen and the tomatoes are at their best.
Thank you for this delicious recipe 🙏
Much love :)
Oh wow!! This looks super yummy!! Must make this! *SHARED*

Thank you this was delicious easy and so fast.As always your recipes do not disappoint.
So happy to hear that! Much love :)
What a wonderful Mediterranean recipe! I will definitely try this. But only when it is warmer again :)
Great recipe and tutorial, thanks 👏👏👏👏

This looks so good. Although where I live it's hard to find almonds but I'll try to make it one day
Wow!!
This is great!!!
A must try!!
Thank you!!

I just came home late from work and had no inclination to cook; instead just wanted to grab something quick to eat. But, after watching this, guess what? Cooking, lol.

I imagine this sauce can be made with any nut I love Walnuts and I have them on hand but I bet you can do this with Pine nuts, Almonds, walnuts, pistachios, Macadamia nut.
Absolutely! Much love :)
Excellent Albert! Try this recipe with lentil or chickpea pasta.

thanks for the recipe Albert. any recommendations for nut allergy replacement?
Sunflower seeds are often substituted for pine nuts and other nuts in recipes. I don't know if that works for your allergies, but a thought. I've used sunflower seeds successfully in recipes such as this. Hope it helps!

You needed to do a 5m video on how to say this pasta dishes name before you did this video :P but thank you for this dish. I am going to cook it!
lol....Much love :)

I prepared this dish for dinner for my family of 3 and it was delicious. We kept some for lunch the following day and it was even tastier ! Albert can I check something with you: you recommend Golden Safran and I'm going to order from them. Their website doesn't say how long it can be kept after opening it. In your opinion and from your experience, how long ? This will help me decide what quantity to buy. Also, any tip to store it ? Thank you from Hong-Kong.
It will hold for up to 1 year in a dark cup board :) much love
It's hard to imagine Italian food without Tomatoes, this dish used them also, but Tomatoes comes from the Americas and wasn't available until they were brought back in the early 16th century. I would be interested in what they used in their pasta and other dishes before then.
Look up pasta alla genovese. Mostly onion cooked for a long time. it is amazing. Takes a long time to cook, makes the house smell like onion. But 💯% worth it.
I looked that up. They used garlic with olive oil (aglio e olio), or dairy (Alfredo), as well as other vegetables
(and meats). Funny, because the tomato, from Mexico, is absolutely SYNONYMOUS* with Italy, Italian culture,
and the Italian Economy. *(Corrected spelling... óòps.)
I believe the noodle came to Italy from Asia as well as the Tomato from the Americas. Crazy to think neither of these are truly Italian.
@@AdamsLeftyBooks: How's this... The pineapple originated in Brazil. NOW look.
@@SouLoveReal still has no place in Italian food, especially on pizza
Te sigo con interés y admiración, pero no sé que pinta una receta italiana con productos italianos en este canal.
I would love to make this recipie, but how do you blanch your almond? thank you.
Generally you buy them that way. Or drop them in boiling water for a minute or two till the paper shells loosen. Rub the paper shells away with a towel or paper. Rinse and toast!
@@janwoodward7360 Thank you so much. Much appreciated.
It's hard to get good fresh tomatoes here. Would canned be ok?
Absolutely :) much love!
Are your calorie counts for all servings or just one? Your recipe says 817 calories. I hope that is for both servings...LOL Cheese is expensive but will try...looks good.
Hi, Thanks!! Could you please upload this dish again, but vegan Please :)
You just have to leave the cheese out and it will still be delicious
@@Dartchy yeah, but cheese makes it creamy. I don't know if vegan cheese is anything else will give the same results
👏👏👏👏👏

You're going to have to change your Channel name to "Mediterranean on a Fork."
You hail from Valencia but are using Californian olive oil. What the wha!?!
I keep thinking you have a bleach out spot on your Tshirt. It's a sun spot
How do you make without mortar and pestle.?? Too cheap huh.
Why? Keep to Spanish cuisine please. You have enough from Spain.
Yummy!!
Much love :)
Very beautiful voice and recipe
Fabulous as was your dish from Argentina :) You are the best .👍
Thank you so much 😃
Amazing dish! Pasta with almonds! Try some dishes from Romania sometime, amicu! Salut!
Sounds great! Much love :)
Hiya Albert! Do you think cashews would work in this recipe?
Yes, absolutely! Much love :)
Thank you, i can remplace Manchego cheese with mozarella cheese from pizza please ?
Absolutely :) much love

Totally LOVE your recipes, already subscribed. I'm most interested in low carb but I substitute pasta in dishes for spaghetti squash... Mucho éxito y gracias por su esfuerzo!!!

Just cooked this for dinner and it's soooo tasty 😍 I used ground almonds and threw everything in together, it worked the same! Sent it to my sister and a friend of mine ... Delicious 😋
So happy to hear that! Much love :)
just made this with vegan cheese and omg
Sounds great! Much love :)
This looks good and healthy, i'll give it a try! Thank you!

Looks great. But I can’t find ripe tomatoes or basil here in January. I‘ll save the recipe and wait till July.

How many people will this recipe serve
Loos amazing!! Thanks for sharing!!

You used a fork ^ ^ i am impressed :D !!!
Looks delicious! It is gratuitous that you didn't put any type of milk or cream in this recipe since Italians do not use any type of dairy in their dishes. I've had chefs in many countries tell me they use dairy when they cook "Italian" dishes".
Much love :)
Awesome recipe, as are all your recipes! I can't wait to try it. I am allergic to almond, so I will try some pine nuts. Thank you for the garlic twisting technique to remove the skin. 😉
Much love :)
Reminds me of pistou. Interesting how good ingredients find each other in slightly different versions.
Yes! Much love :)
Hey there hmm ever since i was a little kid i had helped my grandmom and mom to make something on sanish called spanish jam, and actully doesnt have any thing with jam, but its more pickles vegetables, so i wanted to hear if you knew what the real name is, it is being used like if it was pickles you can eat to every you can eat it for casserole roast, casserole fried chicken oven roast roast and goose duck chicken and even in burgers, it's pickled diced vegetables that are onion tomatoes quash / zurcchinis aubergine/eggplants green and red bell oeppers some have garlic and chili in it to then salt pepper and vinegar, does this sounds like something you know, because always got told that it was spaniah jam hehe
Giardiniera maybe?
Looks delicious definitely will have to try this recipe. Christina
Much love :)
The recipe says to use food processor on low. My food processor only has one speed although it also has a pulse function. Any suggestions for how to handle that issue? Thank you.
Use the pulse function :) much love
Love the travel idea highlighting regional dishes, awesome!

Looks delicious, will try it definitely

Albert, do they really use Manchego cheese in Sicily? Seems like Pecorino would be more common. Anyway, going to be a sleepless night while I debate whether to file this recipe under Italian or Spanish cuisine--might need to add a cross reference or hyperlink or some such. Mangia!
Everything I make I add a Spanish flare to, you can use Italian cheese if you like :) much love
@@SpainonaFork I expect no less from your approach Albert-one of the beauties of your site! 🇪🇸

Take us on a walking tour of your hometown. Visit a couple of the famous bakeries. Then make a simple churro or something. Great content!
Good recipe.
But the Pasta water is starchy. You don't thin the Pesto. You make it thicker.
Nooo better make Spanish dishes.. leave Italian for Italians please!:)
I totally agree.
