Picanha / Sirloin Cap Roast on the Kamado Joe JOETISSERIE

- The sirloin cap roast with the fat cap left intact is an amazing cut of beef. It's typically used to make Picanha. Today I wanted to cook one whole using the new Kamado Joe JOETISSERIE flat basket. I also took advantage of the Kamado Joe Joe Jr. Sear Plate in the bottom position on the Classic 3 to do a final sear on this roast. This setup worked beautifully! Here's the recipe for the Chimichurri sauce:
1 Shallot, finely diced
1 jalapeno pepper, finely diced
4 cloves of garlic, finely chopped
1/2 cup flat leaf parsley, chopped
1/2 cup cilantro, chopped
2 tablespoons fresh oregano, chopped
1/2 cup red wine vinegar
1/2 cup extra virgin olive oil
1 tsp kosher salt
Mix it all up and let it sit for a few hours before serving.... great stuff!

I believe this and the tumbler basket have been pulled due to coating issues (flaking). No idea if they will bring it back.

Get a TriTip and it will typically be a bit larger, but cook it similarly and you'll love it
You can find at Costco if you have one nearby.
So many people that make these videos tell you what they are going to do then do it .The purpose of the video format is to show you how to do it ,not listen to how you are going to do it.
Well heck... All i really need are a few photos of what i am doing. And just to think I have been wasting all this time for all these years when it wasn't necessary.... Thanks for the tip!
