Reverse seared picanha on a Big Green Egg

  • This beautiful top sirloin roast (Picanha) was reverse seared on my BIg Green Egg using a 2-zone cooking setup with the EGGspander base. Rubbed the roast with Spanglish Asadero all purpose and Surf n Turf seasonings (www.spanglishasadero.com/onli.... In addition, you get my chimichurri recipe as a bonus!

    Trying this tonight.. Do you have an alternative to the rub? I don't have the Spanglish.. Also, what kind of gloves do you where when handling Meat?

      Any TexMex taco rub will do. The gloves are from Raven on Amazon.

    Sorry... that's a rare roast. Fat needed to be rendered a bit more. Eating the fat while it's still white does not taste good. Should be more translucent to be considered rendered.
