Lemon and rosemary, wonderful! I can just about smell that all the way over here in Europe. 😀 Doing it myself I really wouldn't bother with the mixing paddle, just another thing to be a bother while the dough hook will do just fine. Also kneading on slow is, given enough time, every bit as good as ramping the speeds up and much better for the long life of the mixer's motor.
