So it doesn't change the fact that he doesn't trust any of his employees, otherwise he would have already started training someone or at least had someone in mind to make the falafel when he gets sick or something. He clearly cares more about the falafel recipe, and making sure it dies with him rather than the people who help sustains his business. I was lucky to live in Astoria for 8 years, a block away from Freddy on Broadway and 30th Street by the C-Town Supermarket. The shawarma and falafal was always excellent. It was a cheap dinner in the evening watching TV, but it was always done right. I became friends with Freddy. He knew everybody in the neighborhood. Freddy would be gone sometimes to visit his family overseas. It would be very cold sometimes, and wet, but Freddy was always there. I moved to Texas in 2013 and Freddy opened a restaurant right next to the train station on Broadway. I miss this genuine guy. I've learned to make my own decent tasting shawarma and white sauce now. Texans have no taste. The only spicy food here is Mexican. Everything else is bland, like a cactus. I hope Freddy is living well. My hat is always off to him. Guys like him, and his crew, make America great!!!

I grew up 2 blocks away from his first cart in front of C-Town, been eating his food for ever since I can remember. This man is one of the best people I know. To this day his Falafel and chicken over rice is the best I ever tasted.
One day I hope to visit New York and go on an eating expedition trying all kinds of different cuisine like this guys. Man it looks so good.

1:02 - No one gives credit to putting the tomato over the lamb - this helps with moisture and flavor due to tomatoes having a high level of sweet, sour, salty, bitter, and savory (umami) compounds...You can do this with rice, and a lot of other foods to ensure moisture content is perfect, along with a savory flavor. Very smart business owner, you deserve your success - coming from nothing and making something - you don't find this work ethic anymore.

I was lucky to live in Astoria for 8 years, a block away from Freddy on Broadway and 30th Street by the C-Town Supermarket. The shawarma and falafal was always excellent. It was a cheap dinner in the evening watching TV, but it was always done right. I became friends with Freddy. He knew everybody in the neighborhood. Freddy would be gone sometimes to visit his family overseas. It would be very cold sometimes, and wet, but Freddy was always there. I moved to Texas in 2013 and Freddy opened a restaurant right next to the train station on Broadway. I miss this genuine guy. I've learned to make my own decent tasting shawarma and white sauce now. Texans have no taste. The only spicy food here is Mexican. Everything else is bland, like a cactus. I hope Freddy is living well. My hat is always off to him. Guys like him, and his crew, make America great!!!
