Hey Katrina. Here is the recipe.
Ingredients:
2 carrots cut into 5cm pieces
2 eggs
160g raw sugar
150 g flour
1 tsp vanilla extract
110g vegetable oil
1 tsp bi-carb soda
1/2 tsp mixed spice
1/2 tsp salt
60g walnuts
Cream Cheese Icing Ingredients:
1 tsp lemon peel
230g icing sugar
30g butter
60g cream cheese
Juice of 1/2 lemon
Walnuts
