+Henry Nguyen Taro is a custom design from www.emplion.com. They call it a yinyang style (half one colour, half another). I'm sure you can ask other manufacturers to design the Lion this way too.

How are your hands and arms positioned when you pull on one ear?

Hi, Winson! I'm able to support the lion head with only my left arm for short periods; it's like holding a pizza box with one hand. My right-hand (dominant) reaches up to tug on whichever ear string I'm trying to manipulate. I pull the string quite close to where the lion ear connects - this prevents accidentally pulling on other strings and making the lion look like it's half-asleep or wiggling both ears when you only want one.
If you struggle with holding the lion head steady with one arm, practice using the head-pad inside the lion too! Your head/neck can help your arm for balancing the lion while your other hand is doing something else (adjusting a qing, collecting a hongbao, advanced eye/ear movements, etc.). Hope that helps!
