The nuts on the bolts that hold the hitch in place are plastic coated threads, it prevents them from coming loose. When they are removed it’s always good to replace them, there really a one time use. People reuse them but there is always a risk of the backing off from wear on the threads. Good luck

Do you still have access to your rear diff fill plug? Or would you have to take that off again when you want to drain and fill the diff?
You can still get to the plug. You go through the hitch with an extension.
