    • 1 large butternut squash
    • 2 tablespoons olive oil
    • 2 cloves garlic minced
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    ✅Instructions

    1️⃣ Preheat oven to 400 degrees Fahrenheit.
    2️⃣ 00:00:13 - Use a fork to prick holes in the skin of the butternut squash. Microwave for 3 minutes on high, then let cool until you can easily handle.
    3️⃣ 00:00:36 - Peel, seed, and cut squash into 1-inch cubes.
    4️⃣ 00:01:20 - Place squash into a large mixing bowl and toss with olive oil, garlic, salt, and pepper.
    5️⃣ 00:01:35 - Spread squash in an even layer onto a 18x13-inch baking sheet.
    6️⃣ 00:02:47 - Roast in the 400 degree oven for 40-50 minutes, until squash is tender.

    NOTES:
    00:00:13 - Easiest way to peel and cut a butternut squash:
    1️⃣ 00:00:13 - Use a fork to prick holes in the skin of the butternut squash. Microwave for 3 minutes on high, then let cool until you can easily handle.
    2️⃣ Use a vegetable peeler to remove the peel.
    3️⃣ 00:00:36 - Cut the butternut squash in half, lengthwise to split the butter nut squash open. Each piece will have the long, skinnier neck, and the bell shape at the bottom.
    4️⃣ 00:00:50 - Scrape out seeds from the bell portion and discard.
    5️⃣ 00:00:55 - Cut each piece to separate the neck from the bell.
    6️⃣ 00:01:01 - Dice the squash into 1-inch cubes.
    FLAVOR VARIATIONS:
    00:02:11 - Brown Sugar Roasted Butternut Squash: toss cubed squash with 3 tablespoons melted butter, 3 tablespoons brown sugar, and 1/4 teaspoon salt
    00:02:26 - Maple Roasted Butternut Squash: toss cubed squash with 1 tablespoon olive oil, 3 tablespoons maple syrup, and 1/4 teaspoon salt
    00:01:45 - Rosemary Roasted Butternut Squash: add 2 tablespoons minced fresh rosemary to this recipe, or 2 teaspoons dried

    I chose the maple syrup combo, but added a little rosemary. Once i pulled them out of the oven, set them on a bed of spinach and arugula combo and covered with foil until the spinach wilted. So delicious!!

    Did this in the airfryer at 200ºC for 10/15 min as i don't have an over and it worked wonderfully!

    I've never had butternut squash, but I will tonight! My husband wants me to try it so we are growing some in the garden this year and picked our first harvest today! He had had the syrup recipe growing up and that's what we will have with supper tonight. We will have steamed cabbage & fried okra, too.I'm looking forward to trying this squash!

    Super great! I tried the rosemary one! I had some rosemary left on the tree and it lasted all winter outside. Brought it in and let it dry out. Then chopped and sprinkled on the squash. Awesome! Thanks for your work.

    Love the easy microwave method. Wait, but did you totally leave out the peeling of the squash? Would've loved to have seen how hard/easy squash was to peel!

      @@miriamriley2855 I just did this, after the microwave, the squash was easy to peel with a regular potato peeler...but use a glove, the squash is hot.

      Why would anyone peel it except to make a soup or puree/mash? The skin is delicate and delicious when roasted. Much easier to eat than potato skin.

    I grew and picked 50 of these butternuts. Absolutely love how they last until the next summer harvest if kept in cool, dark place. Its a Great Prep item & easy to grow. You won't ever starve growing your own veg! 👍

      I always wondered how to store them. The bumper crop meant just putting them in the unseated garage and that’s all. Didn’t cover them or kiss them or even hug them. Just put them down next to the plants I brought in for winter.

      @@rlolo777 like all squash they want warm weather. They need four months above 70 degrees Fahrenheit you might get by with three months if you can get your plants off to a good start in a greenhouse. When the fall frost comes don’t panic. Just collect the fruit before a freeze or the critters get to them.

      @@uprightfossil6673 that's perfect! I'm in a really warm and humid climate. I'm concerned it might be TOO hot and burn them, or, the cold winters will kill them, but you harvest them in fall anyway, right?

      @@rlolo777 hardiness zones 8,9,10 probably need to check with local nursery people about best time. I simply set mine on a shelf in the garage next to the plants I bring in from the porch. I am in zone 6. We grow anything.

    Mine was not so easy to peel. I found out that cut the cubes and then peel off was easier for me. Still in the oven. I´ll tell you how it came out later. Thanks.

    I used cultured butter (it has less water content) and made the brown sugar recipe at thanksgiving last year. 2 thumbs up, I'll be making it again

    I tried the maple one and it was amazing with toast and eggs. If I had bacon omgmgmgmg. It reminded me of eating it with those maple beans so even with that would be great delicious ty for the recipe !!!

    Please show how you peeled the squash. You stated in your description that you peeled the butternut squash but it’s not in the video. That’s the only reason I watched the video.
