The seeds and peels are fine in a salad, but I was using that one in gazpacho and the seeds can make it watery and the peels can be bitter and not blend up as fine as needed.
There are so many videos on how to seed a cucumber. It seems easy enough. I just want to know WHY? Even this youtuber admits she eats the seeds so its not because she thinks they are bad to eat.
I find it easier to scrape down the centre of the halved Cucumber with the bowl of a teaspoon. A more Oval shaped bowl, even one that looks slightly pointy is better for me than a more rounded bowl, not sure why, it might be because I have tiny hands. But, the spoon mimics the shape of the seeds and pulp that run down the centre of the fruit (Yes, it IS a fruit lol) so you remove all the gloop without losing any of the flesh plus when you slice it, the semi-circular shape of the entire fruit is maintained. It's easy to do and once you peel and de-seed you remove the majority of the reason why Cucumber keeps 'repeating' on you for hours after you eat it, it becomes much, much easier to digest.

I like to eat everything, including the seeds when I make a salad. The seeds have victims, and it's healthy.

The seeds hold lots of water that can make certain dishes soggy

Essem, I remove the seeds in a strip using a knife because we love to snack on them.🥒
