🍏APPLE STRUDEL RECIPE INGREDIENTS 🍏
♦️ ⅓ cup (1 ½ oz/43g) raisins
♦️ 2 tablespoons dark rum (or water)
♦️ 3 large (1lb 8 oz/675g) Granny Smith apples peeled, cored and chopped
♦️ 1 cup (2 ½ oz/71g) fresh breadcrumbs (or ½ cup (1 ¼oz/35 g) dried breadcrumbs)
♦️ 2 tablespoons (1oz/28g) plus 6 tablespoons (3oz/85g) butter, melted and divided
♦️ 3 tablespoons plus 2 tablespoons granulated sugar, divided
♦️ 1 tablespoon lemon juice
♦️ ½ teaspoon cinnamon
♦️ ¼ teaspoon salt
♦️ 6 large sheets (13x18 inch / 33x46 cm) phyllo dough (thawed, if frozen)
♦️ Creme Anglaise for serving

My mom’s family is from Austria…this video was so nostalgic. My mom would make massive rolls of strudel..not apple, but with meat and onions, so delicious. Just thinking about it, I can almost taste it. But now, I need to try this recipe…I make apple turnovers with puff pastry all the time, but just recently started noticing phyllo dough showing up in my grocery store. Thank you! 🥰

When I plump up my raisins - I use orange juice, or a ginger tea, or apple cider.- depending on the notes i want. :)
also interesting that you feel granny smith is sweet. here in canada it is is more tart. usually i use Gala or Pink Lady for for applesauces/baking. (and granny smith to add a tartness firmer feeling)

How much in grams the phyllo dough u used?
Looks amazing! I do enjoy an apple-y, cinnamon-y dessert but my favorite desserts will always be something chocolate! Preferably a sweet, rich, melt-in-your-mouth, joy-inducing, milk chocolate, which affords a whole host of possibilities. I’m just not a fan of any type of harsh or bitter chocolate! Probably not trendy or fashionable, but my tastebuds know what they like, regardless of what some food critic might say! 🥰

I have no idea how much apple strudel I've eaten in my life but I had no idea about the bread crumbs until this. At least I don't remember any. My favorite bakingbapple is the Jonathon but haven't seen them anywhere in a long time. Yummy as always, Gemma.

I love that tip with the breadcrumbs! Do you think that filling could work for a regular apple pie?
It can, but I prefer cornstarch. Mainly because I like a thicker consistency for it. But breadcrumbs is a good alternative.

Thanks a lot for the strudel recipe Gemma, this is one of my best beloved childhood memory (the cherry one is as great as the apple one). Phyllo pastry is hard to find in France. I love austrian pastry. I remember reading you need to see the newspaper through the pastry to know whether your homemade phyllo is thin enough. I kind of gave up reading this!

I have made strudel before but with puff pastry and that was also good, but now I want to do it with Phyllo! I can eat this anytime of year, I do not care what the weather is like 🙂

How much in grams did u use phyllo dough
Hi. I used ready to use phyllo dough in this recipe, and did not measure by weight. I used 6 large sheets (13x18 inch / 33x46 cm) phyllo dough (thawed) in one recipe. Hope this helps.
My Mom used to make this all the time but she would only put raisins on one side of the strudel because I still dislike raisins. She would use red apples from her tree. Looks yummy though.
