Mini Cheesecake Recipe - Easy Dessert - Simple No Fail Cheesecake - Family Favorite Dessert

In this video I share with you how to make a super simple Mini Chessecake! You can customize these with whatever topping you choose to use. I made a homemade cherry pie filling to top them with, but you can also use a can of any pie filling you like. Or maybe chocolate chips and some drizzle...the options are limitless. Please see below for the recipe measurements for one batch which will make about 12 mini cheesecakes (maybe an extra or two).

To make one batch of mini cheesecakes you will need the following;
2 (8oz) packages of Cream Cheese
2 Tablespoons of Lemon Juice
2 Eggs
12-14 Vanilla Wafers
Toping of your choice
Cupcake Liners

I would not drizzle mine with chocolate, but i appreciate the suggestion. I have a mild allergy to cocoa.

Oh my you definitely don’t want to do that then! Fruit topping would be nice or maybe even some nuts and caramel sauce?
