    I call these noodles Udon because of the technique (stomping on them) which makes it SO easy to knead and faster to make. If I didn't stomp on them and just rolled them out, they are similar to eggless Chinese noodles from scratch, making for a more authentic dish. Either way you choose to prepare them, they're Amazing in this dish.

    Tips for you guys, how to make chilli sauce:
    - Chilli powder
    -garlic
    - hot oil
    Mix together and enjoy!

    It’s Sichuan peppercorns not Szechuan peppercorns. Not trying to be a smart ass, just figured you’d want the correct way to say it since you’re making a Chinese dish. It’s like if I made Bolognese sauce but I called it Bologne Sauce. Cool channel. ✌🏼

    I love your videos but udon noodles are Japanese and dandan noodles are a spicy Chinese Sichuan recipe (usually with more ingredients like cooked peanuts/soybeans and leafy greens like bok choy)

      Hello Bridgette, I'm not claiming this is an Authentic dish, through my experimenting and research, I found these noodles were very similar to Chinese noodles from scratch but since I used the traditional Udon noodle technique of stomping on them, I referred to them as Udon noodles. I found they work beautiful and taste amazing in this dish.
