When I first found Jemma's channel, I thought she was a little scary (no offense) because other bakers would smile and laugh but she seemed a little strict to me. But the more videos I watched, the more I loved Jemma and her videos. I think her smile is absolutely gorgeous and I love the way she does her videos. ^^
I fell down a rabbit hole while searching for biscoff cupcakes and discovered your channel. Normally I don't stray from Nigella recipes (I can't make Delia or Mary Berry recipes work for me) but lo and behold you told me this recipe would make 12 malteser cupcakes and it did! No leftover cake mix, no extra tins needed. You must be some kind of cake witch!
So yeah, I love your cupcakes (and i have painstakingly replicated most of them) because they are so detailed. I really appreciate how you incorporate the core ingredient (like the malt flavor here, or the lime flavor in margherita cupcake) in all the components, i.e., cake batter, icing and garnishes/toppings. They are well thought out and really stand head and shoulders above the crowd of cupcake recipes found all over the internet.
Xin ying I don't always bake the same no. of cupcakes as Jemma, so my measures vary. I use as much icing sugar as needed to give the icing proper stiffness. So far I have never felt the buttercream is too sweet. I'm no expert, but if you think your buttercream will be too sweet for your taste with this amount of sugar, I guess you could reduce the amount of milk you add because milk makes the buttercream runnier and you'll need more sugar then to restore its stiffness.
Thanks for this recipe. I made them this weekend. I use gas rather than electric, and found 25mins as gas mk 4 worked much better than the Gas Mk 3 (Equivalent to 170c) for 20-22 mins. I made 2 batches, but the second ones at the higher temperature worked alot better (next time, I may even turn up the heat a little more as they still sank a little when cooling). Also, another reason for making 2 batches was because the amount of buttercream I made (with your quantities) was WAYYY to much for 12 cakes and in the end, covered 24 cakes. By no means did I skimp on the topping. All that said, I LOVE this recipe and will definately be making it again. :-)

Although, a few of the cupcakes sank in the middle so I was wondering what I could do next time to prevent this from happening? Maltesers are also my favorite type of chocolate candy! on my 10th birthday way back in 2014 I had a Maltesers cake (originally I wanted an M&M's cake but it was sold out but I wasn't upset about it) and it was awesome
I tried making these and the frosting was extremely sweet and inedible in my view. Normal american buttercream is 2:1 for sugar to butter ratio, but this frosting was 2.25:1. I cut it to 1.6:1 which was much more palatable.
Just made these! Soooo yummy! must admit however I did not even use HALF the buttercream topping! But just made more cupcakes! Half for work half for me!! 😊😊

The centre of an English Malteser, is in fact made by Horlicks, the same who made your Horlicks powder. Horlicks was invented by two English brothers, James and William Horlick, from Gloucestershire. The original UK factory, just to the West of Slough Station, was by the railway bridge on Stoke Poges Lane, Slough, Bucks (now Berks). Ovaltine was originally Swiss, but developed in Kings Langley Hertfordshire. Ovaltine dropped it's egg content years ago, and so is not as sophisticated as our Horlicks. Ovaltine is a very different taste compared to Horlicks, you either prefer one or the other.

Allright! The first time I got some weird overly fluffy but sinked-in-the middle cupcakes as well. Maybe i'ts because of the Ovomaltine, it's contents are probably a bit different from the Horlicks used by Jemma. My solution: more flower, less sugar. So for the recipe above: 135g flower, 100g sugar and the rest just as described. Second batch was great: firm and fluffy. Compliments all around :-)

+Merel Bas I have made these 4 times now and every time they sank in the middle after taking them out of the oven. I consider myself an experienced baking and it's very frustrating when things don't work! lol! I've made most of the other cupcakes in Jemma's book, never had this problem with others, only with the malteser ones. Very annoying cos I absolutely LOVE malt. I'm using Nestle's Malted Milk Powder (very similar to Horlick's). Don't know if that's the reason or not, can't think it would be... I use all my ingredients at room temp, follow the recipe exactly. I notice the mix seems to 'split' a little after the milk is added (ie you can see little globs in the mix). I really really want these to work. Sort of comforting to know they are sinking for others, that it's not just me! My fourth go just failed, but I am going to try your reduced sugar next time.

You can make swiss meringue buttercream (i suggest 2 butter:1 sugar rather than following her recipe) and mix in the crushed maltesers.. i tried cutting her sugar levels by 20% and it was still too sweet for me

I'm an American currently vacationing in Singapore. I just had my first taste Malteasers. They are so superior to the common brand of chocolate covered malt balls in the US! It's mostly that the chocolate is a much better quality but the crunchy malt inside has a cleaner taste and smoother texture as well.
Hi jemma, I was so excited about this cupcakes and I've baked it tonight. As promised, the cupcakes were so amazingly fluffy and tasty, but I failed at the making of icing... it was so unimaginably sugar rushing sweet... and it was quite runny... I've followed every single step n patiently beat the icing but still was not successful... and the worst part was I actually went ahead n pipe it onto my wonderful cupcakes... T.T sob... any tips on a better icing pls?

I'm an American currently vacationing in Singapore. I just had my first taste Malteasers. They are so superior to the common brand of chocolate covered malt balls in the US! It's mostly that the chocolate is a much better quality but the crunchy malt inside has a cleaner taste and smoother texture as well.

Hi jemma, I was so excited about this cupcakes and I've baked it tonight. As promised, the cupcakes were so amazingly fluffy and tasty, but I failed at the making of icing... it was so unimaginably sugar rushing sweet... and it was quite runny... I've followed every single step n patiently beat the icing but still was not successful... and the worst part was I actually went ahead n pipe it onto my wonderful cupcakes... T.T sob... any tips on a better icing pls?

I don't know about the flour but baking soda and bicarbonate soda are the same thing❤️
I'm not sure what quantity but you can add baking powder to the flour so the cupcakes rise!!!
