I'm gonna steal your idea for struts on the fork to support the bar bag because I recognize practical brilliance when I see it. I got lucky and secured a now discontinued Surly Pack Rat (also known as SPR or Spear if you prefer) frame set which is probably best described as a poor mans crust. More planking than planing I suspect. Either way, once built, I'm heading out into the great unknown to seek out that magical place between lost and found. One question - Are there reasons to go with canti brakes over v-brakes? I'd like to do w/o brake hangers if possible. Thanks for the inspiration!
Congrats on the Pack Rat! The bag support is a game changer, but I can't take credit for it. For me though, I have both (V-Brakes on a Susie Longbolts which is a much heavier bike with a longer wheelbase and bigger tires ua-cam.com/video/diyjx22WbNY/v-deo.html ) and for a bike like this I would think the canti brakes would give better modulation and prevent wheel lock up. The V-brakes I think would be overkill? Of course this is just conjecture based on me having tried both but on two very different bikes.
Hi Todd, both brakes types work well, but like anything, it depends on your use case. For this bike, using Canti brakes just makes a lot of sense. Although Noody has taking this thing down some crazy stuff, his typical ride is on road with very light gravel. Canti brakes work perfectly for this. As Noody mentions in his response, using V-Brakes will allow you to have more braking power and will be able to lock up the wheels easier. There's a lot to consider like your weight, how you want to use the bike etc. But in general, use V's for more mountain downhill riding, and canti's for anything else. Hope that helps!

Ooh nice pick up, the breakaway LB is sick! The saddle is from Berthoud and the style I have is called the Aravis Open which has the cut out and Titanium rails. Yeah, it most definitely is and for the price the Crust wheels are hard to beat. I have a Medium 55cm and it’s light (don’t remember exact weight but maybe 21-ish lbs?) I’m about 5’10” and my inseam is 32”.

What why didn't you go with a 1x drivetrain? The best I can learn is that 1x like the AdventX and Shimano 5100 are more than adequate for mountainous terrain and plains. Since you seem fairly expert, what mfr would you recommend for an all around do-it-all touring/trail/all weather/commuting bike for 6'3, 38in inseam that also needs to carry shopping supplies, maybe 300lbs total weight? 1x drivetrain + fenders + rear rack. It's really an impossible struggle to find a suitable bike.
1x or 2x is really just rider's needs and preference. The bike that comes closest to what you're wanting with a 1x set up - in my opinion - is this: crustbikes.com/collections/frames/products/evasion?variant=40010712383578 Frame will handle everything you said, but efficiency will come down to what tires you decide to run.

This is my joint favourite Crust with the romanceur. Was very close to buying one but opted for my road Rivendell. The urge will never go away though!

How does it handle without a load? I like to climb light. The low trail scares me
Handles fine without load. You'll notice a difference with some weight up front, but nothing crazy without.

Thanks I'm 5'10" and my PBH (Pubic Bone Height) is 81cm which is about a 31~32 inch inseam

I'm 5'10'' with a 31"~32" inseam. Any of those will make for an enjoyable commute (but I'd go with a Romanceur )

Its definitely lighter than the Bombora - I want to say even with the same size tires the LB is lighter and handles lighter.
"Grand Bois" is actually pronounced "Grand Bwah". "Bois" is French for wood. Though "Big Wood" might be along the same concept as "Big Boys" :).
