  • How will astronauts eat on Mars? Astronaut Dr. Sian Proctor reflects on the four months she spent living in a NASA Mars simulation designed to find food strategies for long-term space travel. She was able to cook using freeze-dried fruits, meats, and vegetables, and she came to the conclusion that everyone should eat like a Martian. This is because when food is freeze dried, the water is removed from it, leaving only nutrients. This makes the food less susceptible to microbes, resulting in it becoming shelf stable. Without water, food is also lighter, meaning it is easier to transport while using less energy. In this way, innovations made for space travel can also benefit the climate here on Earth!
