    As a French pastry chef, I recommend that you leave your dough in the fridge for at least one night. Then, once your dough is in the mold, put it in the freezer for 10 minutes. it is the thermal shock that will create the perfect bump. and finally, you should cook your madeleines for 6 minutes at 200 ° C then 5 minutes at 150 ° C.

    Another great recipe!
    My mother used to make Madeleines the British way, which is to bake them in dariole moulds. Cover the top and sides of the cooled cakes with raspberry jam, roll them in desicated coconut and to pop half a glace cherry on the top. Voila. (btw, we Brits pronounce the name as 'madelanes', while the French pronounce it as (mad'lenne'.)
    Here is a recipe for Madeleines dating from 1755:
    On a pound of flour, you need a pound of butter, eight egg whites & yolks, three fourths of a pound of fine sugar, a half glass of water, a little grated lime, or preserved lemon rind minced very finely, orange blossom praliné [French praline is a mixture of ground almonds and caramelised sugar, with, in this instance, the addition of distilled orange blossom water]; knead the whole together, & make little cakes, that you will serve iced [i.e. dredged] with sugar.

    My mother used to make these all the time. They were her favorite cookie of all time. She would drizzle them with melted chocolate and then powdered sugar. She was a phenomenal baker. Thanks for the memory!

    Madeleines were my childhood desserts. I always liked getting them from Starbucks and bakeries! They’re so good!

    Made these and they are a favorite in the house! 375 for 12 minutes was perfect, I used a silicon pan. Now I can find a new treat to splurge on at Trader Joes and learn to make myself. Thanks John!

    So good. I had Madeleines as dessert after an amazing dinner this summer and they served them with lavender whipped cream. The lemon Madeleine with just a hint of lavender in the cream was the most delicious thing ever. I swear I dream about that dessert.

    I use to make these weekly for 4:00 PM tea. We love them hot out the oven. Our old recipe is different and is like a pancake batter. It still gets the hump. I've read Remembrance Of Things Past by Marcel Proust. He would have tea and eat a Madeline, which would trigger a far off memory and he would delve into relaying the story. It is one of THE MOST beautifully written books I've ever read and Guinness Book says it is the longest book ever written. Some of the stories are about really strange people his mother invited to their house. At least strange to a child. It can take a few hours just to read one page of the book, at least it did me. I read about half the book in French and finished in English. The Moncrieff translation is a stunning use of the English language. It took me a few years to complete and started me in the habit of having Madeleines with tea at 4:00 PM.

    These are my favourite little cake to have with afternoon tea. When I met my boyfriends parents I made almond madeleines and dipped the bottoms into chocolate and it was delicious.

    Love your recipes. About the history of the invention I learned: A young kitchen maid, Madeleine Paulmier, delighted the aristocratic society around the Polish exiled king Stanislas Leszczynski in Commercy with it in 1755. As a thank you, he named the (later shell-shaped) treat after her.

      My Mexican grandmother used to whip whites with a fork for chilé relleno. It was amazing to watch her do it. She'd just sit with the bowl and the fork and whisk, whisk, whisk (as John says) while having a conversation. She'd go for around 15 minutes without stopping and when she was done she'd have beautifully fluffy eggs whites. Then she'd peel freshly roasted chiles with her bare hands which is a whole other story.

      @@karolinapupi19977 -- She was an amazing woman. Her life wasn't easy but through hard work and faith she made a good life for herself. I'm thankful for her because her example shaped my dad who taught me to not take things for granted and work hard to achieve my goals.

    "A la Recherce du Temps Perdu ", famous novel by 19th Century french writer, Marcel Proust ( 1871-1922), in which he describes his childhood experience eating those famous "madeleines" that he liked so much, with some relatives in France. Proust is an adult as he remembers and share those cherished childhood experiences in his novel-he describes the smell, the taste, the sensations... how those memories come back to us even if long forgotten, and take us back to those times when we were growing up and living up those experiences...French majors study Proust in French Literature. His writing is not easy to read and it's a fairly long novel, but is delightful if you like reading. It is the first novel of a " trilogy " ,(each novel is about or over 500 pages long). " Bon Appétit! " Enjoy those "madeleines" so delicious with morning coffee, or tea in the afternoons, or just anytime for your own pleasure. Thank you " Preppy Kitchen " for this nice recipe for french " madeleines " made famous by Marcel Proust in " A La Recherche du Temps Perdu ". ( Masters in French and English Literature major )

    Your madeleines look delicious, but I am wondering why you said Proust invented madeleines ? When he described his memories of them they had already been a French favorite for over a century. (Wikipedia even prints a recipe from 1758 which might be fun to try.) Proust describes them as “one of those squat, plump little cakes called ‘petites madeleines,’ which look as though they had been moulded in the fluted valve of a scallop shell.” Doesn’t sound much like stale, left-over tea-cakes to me lol! But I’m sure he would have loved yours- beautiful work as always! 🇫🇷

    I decided to get a jump on my holiday baking. I wanted to freeze some pie filling. I decided on Buttermilk Pies. Yes, I'm southern. I messed around and browned some butter and ... WHOA!!! The best I've ever made. 😋

    Okay but that butter hack has come in handy with SO many recipes. I’ve taken to browning (or at least melting) butter for so many things and adding a small amount of butter helps add richness AND brings down the temp to prevent cooking any eggs

    It's funny how there are expressions that we learn in French like when someone has something that they prefer, it is said to be their "madeleine de Proust." Also, it is sometimes said that when someone is sobbing that they are crying "comme une madeleine. "
    Madeleines are actually one of my husband's favorite desserts. They're usually sold in big sacks here and are individually wrapped here.

    While I have never used baking powder to make madeleines, I was reminded of when I was young and poor 40 years ago and actually did make genoise and madeleines with a balloon whisk by hand. And yes it was as tedious as it sounds! One more reason to love my Kitchenaid!

    Proust was writing about Madeleines, in his MEMOIR; he mentions having them at his aunt's table, with a cup of tea -- so they were already in existence when Proust was younger; someone else INVENTED them, and we are delighted that they did !

    Good video. For nearly 30 years I've made madeleines from the "The Joy of Cooking" recipe which is so different from your recipe: it's made on the stove using a double boiler and clarified butter. The most interesting aspect to me is your emphasis on creating air bubbles. I also liked the tip about the baking powder. I'll have to try your recipe!

      Because he's wrong. Madeleines do not have whipped egg. He effectively made a bastardized financier in a madeleine pan.

    That voice!! His voice reminds me of the Ted-ed Christopher Warner videos I used to teach my English classes about different kinds of irony. A very distinctive voice. Oh, and the Madeleine's turned out great too.

    Thank you for this video. Your history part made me curious and I just went to see some French sites to read about the origins of the madeleine, cause I was persuaded, Proust "just" mentioned it in a famous book. French folk still uses the expression "the madeleines of Proust", but the writer did not invent the cake. He lived in the XIX. century and the madeleines were invented in the XVIII. at latest.
    Now, there are several legends of it, but non of them is certain - this means I have to transform myself to a gossiper, to tell you the most famous ;)
    It says of a reception organized by the duke of the Lorraine, in 1755, where the cook leaves furious after a scandalous debate and he takes with him the dessert. To save the evening (no proper diner without a dessert between nobles in France), a servant, named Madeleine, proposes to bake a little cake, learnt from her grandmother. (This means, in 1755, a more or less young person's grandma knew the cake already). The duke did not have other choice, he accepted. Madeleine did not have the correct mould, but she was enough inventive to use instead the shells of scallops - giving the today's form to the cake, which became a great success between the invitees. That is why the duke asked the name of the cake from Madeleine, but because her answer was "there's non", he named the cake after the servant, to honor her.

    After watching this video, I tried making madeleines for the first time. It was quite difficult during my initial attempt, even with the help of the video. However, as I kept watching the video and practicing several times, I can now make madeleines quite well. Recently, madeleines have become my favorite dessert because they are delicious and easy to make. By the way, why don't you consider making a video about making a lemon cake next time?

    This is a wonderful video and I have my dough chilling in the refrigerator right now. One point of contention, however: Proust did not invent madeleines. Rather, he immortalizes them in /In Search of Lost Time/, in which he uses them to contrast involuntary memory with voluntary memory.

    I'm a wanna be good baker and cook. Last night l at tempted to make your madelein'e's. I was so impressed they came out so pretty and tasted delicious. I really enjoy watching you. But if l can make a suggestion. I have to watch the video's moved and over to pick up the ingredients, and write down the recipe. Isn't there an easier way to do that? I'm not Tec savvy.

    Pastry Chef Jean Avice invented the Madeline, originally it wasn’t that adorable little shell shaped cookie the world over is familiar with. Originally she made them in small Aspic Molds. She’s also the one who invented “pâté à choux”. Author, Marcel Proust made them famous in his autobiographical novel; “A la Recherche du Temps Perdu” translated, “Remembrance of Things Past”. I’m a retired pastry chef for went to school in Paris.
    Thank you for browning your butter... I was screaming at my computer, “Where’s the vanilla? Where’s the lemon zest?” I have one question though: What did they bleep out? 😳🙄🤦🏻‍♀️ They came out lovely! 😊

    Hey made these today and they taste super yum. Though mine were not done in 11 minutes. Rather it took around 15 to 20 minutes. But the taste is super yum. Will be making them again and again.. Since they are super easy to make.
