Anyone would be able to understand the restaurant was in SERIOUS trouble and he is walking around with donuts. That felt poorly contrived to me. Even though he has been more single minded on his dessert, this still felt like he was either stoned out of his mind or the situation simply makes no sense. Carm reacted the way about 95% of head chefs would react to such a major catastrophe. They deserved to be fired on the spot, not give the opportunity to quit.

For a chef, he has been very level headed to that point in the series even with all of the pressure he is under. For me, it made almost no sense that Sydney reacted the way she did when with full vitriol she called him a piece of s$%t. I love that y’all view the show from the perspective of someone who is well versed in the way restaurants actually run. As a chef, this is easily the most accurate portrayal of kitchen life, but it’s also nice to hear things from the FOH perspective too. Please watch season 2, you will cry.

Marcus was 100% in the wrong, but I understand why Sydney quit. Sure she was the sous, she was supposed to take care of things and report back to Carmy, but she never wanted to be, he basically forced the brigade and forced her into the position of sous. Besides, there's not much of a point in having a sous chef if you're not gonna listen and talk to them, and Carmy wasn't doing those things. She fucked up with the preorders, yes, but having a head chef you can't really rely on is horrible, and then that chef uses everything he can against you during a shitshow of a service? I dont think Richie was calling Syd a slut he was calling her manipulative that the 1 time she gives an off menu dish to a customer for free is when its to a critic and the critic specifically mentions in the review that shes the one who cooked it.
She screwed the line, kept needling Richie, didn't say "corner" (but got lucky), then was reckless and stabbed a co-worker. After all of her mistakes, she leave during service instead of after. Sydney is always insisting on being heard on HER time instead of waiting until its quieter. She has no patience and will interrupt people incessantly. Carmy is often too much, but in this episode, Sydney is by far the biggest cause of stress. I can't blame Camry at all this time.
Having this be a 1-shot was a pro move by the producers. Once again I love that you both have experience with this world, the insights are great. Can’t wait for season 2
When I first saw this I was just stunned once I realized it was all one shot. Soon as the episode ended I restarted it just to fully take it all in. Amazing job for the cast and crew and the amount of stress is insane.
The problem to Carmy is that Sydney went behind his back who is her boss and Head Chef. She can disagree with him but when she goes behind him, to basically mess with the menu when she was already said no or we will talk about it later, no less, that's a problem. She can't be doing thing's behind his back just cause she disagrees doesn't like it or think she has a better idea. Not only that but to leave during a rush that is low-key her fault because the pressure is on and basically interfering more then helping by talking shit to Richie, instead of doing her job with the vegetables, a lot of the onus is on Her and Marcus, who could not get out of his own head and do the job he was told to do FOUR TIMES, with a warning from Carmy on how he was gonna fuck his day up if he didn't focus. At the same time Carmy should not have put her (an inexperience chef) in charge of a crazy system that's they just brought out. He needs to actually delegate and manage instead of falling into the chaos and losing his shit
When did she go behind his back, she made the risotto dish and he knew about, all he didn't know was that she gave it to some random guy and she was obliged to even tell him that. In tired of people trying to paint Sydney as a problem maker, when in fact she is a problem solver that actually makes things better for Carmy and the restaurant, when he starts to listen to her ideas in s2.

She is the one that has tried to improve the kitchen the most, yet still gets undermined constantly. The two of you have clearly never worked in a REAL restaurant. Sydney stayed longer than ANYone else would have in this situation. Carmy attacks her dish, again, when the orders come in. I understand the stress. I have actually been in a situation worse than this, in NYC. Had Carmy been there, nothing, would’ve been done. Nothing. Cousin Richie, he should not be working there at this point in the show, he is awful. The only thing Carmy did that was correct was tell Richie that he deserved being stabbed. Marcus, is obviously a dessert chef, a lot of people are pissed at him for working on the Donuts. This is the issue, at the end Carmy tries it, it was not only good- it was better than the cake. This comes down to COMMUNICATION. Richie can not attack random people and Carmy cannot break down and start throwing blame. This causes other people to leave.

Arianna mentioned the whole "one person's bad mood will spread and ruin the day" thing (paraphrasing obviously) and I think that is the crux of why this whole thing was sorta on Carmy. Everyone talking about how Sydney and Marcus royally fucked up (and yes they did) but when Carmy started freaking out, it spiraled and made everyone else also freak out. A leader needs to keep their head and LEAD BY EXAMPLE. Hence why the show and whatnot makes Carmy apologize to them vs. vice versa. Love this show so much and this episode really captured that "everything is going to shit" feeling that you sometimes have in a restaurant.

I always bring up the music in this episode. Spiders by Wilco, the live version, even. Starts with a simple drum and bass beat and ends with an absolute cacophony of chaos and feedback. Remember this song because it comes back at the end of season 2 and the vibe is completely different.
I love how they keep the live version of Spiders (Kidsmoke) rolling, with the end coming at the end of the episode, and they keep rolling the applause and cheers, like it is cheering and applause for the live performance the cast just performed with the one take.
people in every comment section under this specific episode are so annoying and missing the point: all of the people in this restaurant caused this, it's the climax. idk why everyone expects these people to be perfect and have perfect reactions, they are very human and realistic. and exactly because of that they can improve now and learn. without conflict there would be no growth and i love this mess lol, it's directed and written perfectly.
Carmy agreed with the stuff Syd wanted to do, but he let her prod him to do stuff sooner than he was ready for, so when things went wrong, he flipped out on her, blamed her. As the boss, yeah, it's on him, he should not have let her pushing make him move before he was ready, but Syd pushed for this and then fucked them all when she took off. Marcus...I don't know what Marcus was on, but he was definitely on it. Supposedly he learned from the blown fuse incident, but I guess he didn't, since here he is, focusing on his passion project while ignoring his actual work again. All three of them fucked up, but only Carmy reached out and apologized.
Maple is right; ive worked in hospitality and food for over 20 years. As terrible as the anxiety this episode shows, its soooo normal. I have seen so many people just quit or walk out because of how bad it is, but us long term workers know that this is just another shit day. You do either need to cry, or hold it in and heavily self medicate afterwards, and this whole comment section is literally every hang out night with staff members about who screwed up what or who was really wrong. Theres a reason there arent many 20+ year veterans, and its definitely not fair we had to endure it.
How Sydney gets a pass with this episode is insane. Legit everything is her fault in this episode. Yeah, I have worked this shift: I was allways by myself with one chef when i had lunch shifts. Our restaurant seated 52 people (really should have been be 48). Worst day was when we had people there AT opening, it filled up within 15 min and didn't stop for 3+ hours... I had to balance service, clearing tables, helping the chef plating up and doing dishes .. I could never...stop...moving. People kept coming and leaving, It was honestly all a blur and I don't understand how we managed.😅😅😅 Yeah, It was insane and I know many of my colleagues who were part timers would have broken down.😢
The first time I saw this episode I had to turn it off, I was damn near about to have a panic attack. I’ve been working in the service for over ten years in Detroit, and I’ve been through some crazy shifts but the shit they go through in this show nearly broke me.
we had this happen for a whole WEEK! like this every day . maybe worse, during Comic-Con we are the closest restaurant to the convention center.. we did around 900 covers in just 6 hrs.. with only one fking dishwasher, and one cook short.. our manager had to get in the dish pit to help lol.. it was the longest fking week.. boh cooks came clocked out like we just been thru war lol.. burns, cuts, waitresses quitting and crying lmao .. it was a mess.. 7yrs later my cook friends still laugh about that week.
I love these twos reactions, i respect the fact they have experience in the industry but coming from a kitchen background, after watching this show i always hated Sydney, sure shes got alot of good qualities, shes smart, ambitious and her ideas, had they been implemented properly would have been extremely beneficial but shes green. I think too many people get caught up in handing out blame for what went down in this episode when that’s not the point, but you guys nailed it. The boss sets the tone for how everybody else is gonna act and treat each other. Carmy is stressed and I get that, but it’s his attitude that trickles down into everyone else’s mindset. He puts down Sydney’s dish (by saying the food critic is a hack) and then when she tries to communicate with him or help fix the problem (that is admittedly her fault) he shouts at her. side note- the one take and the camera movement is telling this narrative too because yes it helps create an atmosphere of chaos and anxiety, but it also shows how the negativity flows from the top of the hierarchy down. We watch the interaction between Carmy and Sydney and then the camera follows Sydney as she chews out Marcus and berates Richie and Tina, and then we follow Marcus walking out. I have a lot of empathy for Sydney to be honest, and that might be an unpopular opinion, but it’s not like she was being a bitch just to be a bitch. She’s gotten so much shit from everyone else this season and worked through it but she hit her breaking point in this episode and we saw what that brings out in her. Should she apologize? definitely. But am I still on her side? Yeahhhh

I love that y’all view the show from the perspective of someone who is well versed in the way restaurants actually run. As a chef, this is easily the most accurate portrayal of kitchen life, but it’s also nice to hear things from the FOH perspective too. Please watch season 2, you will cry.

Carmy’s attitude about the situation was completely justified. The majority of the problems were caused by Sydney and she took absolutely no responsibility for it.
Marcus was 100% in the wrong, but I understand why Sydney quit. Sure she was the sous, she was supposed to take care of things and report back to Carmy, but she never wanted to be, he basically forced the brigade and forced her into the position of sous. Besides, there's not much of a point in having a sous chef if you're not gonna listen and talk to them, and Carmy wasn't doing those things. She fucked up with the preorders, yes, but having a head chef you can't really rely on is horrible, and then that chef uses everything he can against you during a shitshow of a service? Not good at all.

Sydney is very fast paced about everything where I think Carmy is more cautious. Sydney wanted to start the to go service and add new items to the menu where Carmy just wanted to stay where they were at right now at least for a little while until they were more stable. If anything Sydney wasn’t listening to Carmy either. Sydney just needs to learn to slow down. She even stated in a previous episode that her catering business failed because it got too big too fast.
yeah my biggest issue with this show is how they handle all of that. They make Carmy out to be the bad guy when its Marcus and Sydney that fucked up then walked out.

Like Carmy couldve just canceled and refunded the overnight orders and not put his crew through all that and I get why Sydney left bc she said in an earlier episode she didn't wanna work at a place where her boss is screaming in her face, but SPOILERS I don't like how later episodes never bring up that Sydney and Marcus did fuck up and they never apologized like Carmy did.
Canceling so many orders can be devastating for business and reputation.

I dont think Richie was calling Syd a slut he was calling her manipulative that the 1 time she gives an off menu dish to a customer for free is when its to a critic and the critic specifically mentions in the review that shes the one who cooked it.
She screwed the line, kept needling Richie, didn't say "corner" (but got lucky), then was reckless and stabbed a co-worker. After all of her mistakes, she leave during service instead of after.
Sydney is always insisting on being heard on HER time instead of waiting until its quieter. She has no patience and will interrupt people incessantly. Carmy is often too much, but in this episode, Sydney is by far the biggest cause of stress. I can't blame Camry at all this time.
Having this be a 1-shot was a pro move by the producers. Once again I love that you both have experience with this world, the insights are great. Can’t wait for season 2
When I first saw this I was just stunned once I realized it was all one shot. Soon as the episode ended I restarted it just to fully take it all in. Amazing job for the cast and crew and the amount of stress is insane.
The problem to Carmy is that Sydney went behind his back who is her boss and Head Chef. She can disagree with him but when she goes behind him, to basically mess with the menu when she was already said no or we will talk about it later, no less, that's a problem. She can't be doing thing's behind his back just cause she disagrees doesn't like it or think she has a better idea. Not only that but to leave during a rush that is low-key her fault because the pressure is on and basically interfering more then helping by talking shit to Richie, instead of doing her job with the vegetables, a lot of the onus is on Her and Marcus, who could not get out of his own head and do the job he was told to do FOUR TIMES, with a warning from Carmy on how he was gonna fuck his day up if he didn't focus.
At the same time Carmy should not have put her (an inexperience chef) in charge of a crazy system that's they just brought out. He needs to actually delegate and manage instead of falling into the chaos and losing his shit

@chand911 it's weird to me that everyone seems to ignore the way Sydney was treated by everyone else in the kitchen since episode 1. She is the one that has tried to improve the kitchen the most, yet still gets undermined constantly. Of all the characters has not done anything as problematic as Carmy and Richie yet people hate her more.
The two of you have clearly never worked in a REAL restaurant. Sydney stayed longer than ANYone else would have in this situation. Carmy attacks her dish, again, when the orders come in. I understand the stress. I have actually been in a situation worse than this, in NYC. Had Carmy been there, nothing, would’ve been done. Nothing. Cousin Richie, he should not be working there at this point in the show, he is awful. The only thing Carmy did that was correct was tell Richie that he deserved being stabbed. Marcus, is obviously a dessert chef, a lot of people are pissed at him for working on the Donuts. This is the issue, at the end Carmy tries it, it was not only good- it was better than the cake. This comes down to COMMUNICATION. Richie can not attack random people and Carmy cannot break down and start throwing blame. This causes other people to leave.

Arianna mentioned the whole "one person's bad mood will spread and ruin the day" thing (paraphrasing obviously) and I think that is the crux of why this whole thing was sorta on Carmy. Everyone talking about how Sydney and Marcus royally fucked up (and yes they did) but when Carmy started freaking out, it spiraled and made everyone else also freak out. A leader needs to keep their head and LEAD BY EXAMPLE. Hence why the show and whatnot makes Carmy apologize to them vs. vice versa. Love this show so much and this episode really captured that "everything is going to shit" feeling that you sometimes have in a restaurant.

I always bring up the music in this episode. Spiders by Wilco, the live version, even. Starts with a simple drum and bass beat and ends with an absolute cacophony of chaos and feedback.

Carmy agreed with the stuff Syd wanted to do, but he let her prod him to do stuff sooner than he was ready for, so when things went wrong, he flipped out on her, blamed her. As the boss, yeah, it's on him, he should not have let her pushing make him move before he was ready, but Syd pushed for this and then fucked them all when she took off. Marcus...I don't know what Marcus was on, but he was definitely on it. Supposedly he learned from the blown fuse incident, but I guess he didn't, since here he is, focusing on his passion project while ignoring his actual work again. All three of them fucked up, but only Carmy reached out and apologized.
Maple is right; ive worked in hospitality and food for over 20 years. As terrible as the anxiety this episode shows, its soooo normal. I have seen so many people just quit or walk out because of how bad it is, but us long term workers know that this is just another shit day. You do either need to cry, or hold it in and heavily self medicate afterwards, and this whole comment section is literally every hang out night with staff members about who screwed up what or who was really wrong. Theres a reason there arent many 20+ year veterans, and its definitely not fair we had to endure it.

Yeah, I have worked this shift: I was allways by myself with one chef when i had lunch shifts. Our restaurant seated 52 people (really should have been be 48). Worst day was when we had people there AT opening, it filled up within 15 min and didn't stop for 3+ hours... I had to balance service, clearing tables, helping the chef plating up and doing dishes .. I could never...stop...moving. People kept coming and leaving, It was honestly all a blur and I don't understand how we managed.😅😅😅

The first time I saw this episode I had to turn it off, I was damn near about to have a panic attack. I’ve been working in the service for over ten years in Detroit, and I’ve been through some crazy shifts but the shit they go through in this show nearly broke me.

we had this happen for a whole WEEK! like this every day . maybe worse, during Comic-Con we are the closest restaurant to the convention center.. we did around 900 covers in just 6 hrs.. with only one fking dishwasher, and one cook short.. our manager had to get in the dish pit to help lol.. it was the longest fking week.. boh cooks came clocked out like we just been thru war lol.. burns, cuts, waitresses quitting and crying lmao .. it was a mess.. 7yrs later my cook friends still laugh about that week.

I love these twos reactions, i respect the fact they have experience in the industry but coming from a kitchen background, after watching this show i always hated Sydney, sure shes got alot of good qualities, shes smart, ambitious and her ideas, had they been implemented properly would have been extremely beneficial but shes green. Sydney is the worst kind of person to give power to make decisions, she is oblivious to the regular communication within a kitchen, nobody knows were she is, never communicating sharp, corner or behind and when the shit inevitably hits the fan she denies all responsibility and falls apart, the fact she leaves is all the evidence i needed to know she us in over her head, shes on her way no doubt about it, you gotta take your licks before you can play with the big dogs and she hasent paid her dues
Thats not to say they are wrong about everything, they are totally right about carm not supporting sydney and about cousin and everything going on with him, its refreshing to see the reactions of people who have been in the industry, who have lived through the kinds of things that go on, i truly believe everyone should experience what its like to work in hospitality and understanding what it takes to provide a service to someone makes people into better human beings, that being said, front of house experience will never have as much insight as back of house experience

I think too many people get caught up in handing out blame for what went down in this episode when that’s not the point, but you guys nailed it. The boss sets the tone for how everybody else is gonna act and treat each other. Carmy is stressed and I get that, but it’s his attitude that trickles down into everyone else’s mindset. He puts down Sydney’s dish (by saying the food critic is a hack) and then when she tries to communicate with him or help fix the problem (that is admittedly her fault) he shouts at her. side note- the one take and the camera movement is telling this narrative too because yes it helps create an atmosphere of chaos and anxiety, but it also shows how the negativity flows from the top of the hierarchy down. We watch the interaction between Carmy and Sydney and then the camera follows Sydney as she chews out Marcus and berates Richie and Tina, and then we follow Marcus walking out.
I have a lot of empathy for Sydney to be honest, and that might be an unpopular opinion, but it’s not like she was being a bitch just to be a bitch. She’s gotten so much shit from everyone else this season and worked through it but she hit her breaking point in this episode and we saw what that brings out in her. Should she apologize? definitely. But am I still on her side? Yeahhhh
I feel like I'll always be in the minority when it comes to this particular episode and Syd. I don't understand why people expected her to apologize for walking out. To say that she made a mistake and just walking out is absolutely ridiculous. There were many things that led to her decision, and she shouldn't have to apologize for it.
