I use only 4 knives for now; 7" Santoku, , 6" Meat Cleaver, 9" Bread , and a 4" Pairing.
Some might shun the Shun brand because they can't handle these knives correctly, others just pronounce it wrong (say: shoon).
For me I don't have a 10" knife. I use my 8" bread (scalloped) knife for the things you said you use your 10" knife for, such as cutting watermelon, pineapples and things like that. Ever since I started cutting those big items, or things with hard rinds, with my bread knife I have not used a chefs knife on anything like that since. The scalloped knife cuts through those items so easy. I only have an 8" Chinese vegetable cleaver, an 8" bread knife, 8" Chefs knife (Global G2), 7" fillet boning knife, a set of 3 different pairing knives and 8 non-serrated steak knives. I will be stepping down to a 5.5" fillet boning knife for a little more control at some point. I enjoyed watching this video. Thanks for sharing and cheers.
At least you know how to hold a knife . It drives me crazy when people. Lay their index finger on top of the blade .

If I could have only one knife in the kitchen, it would be my Victorinox 8” chef knife. Second is my Case paring knife. Third is my serrated vintage Cutco knife. I have more knives but those three are really all I need.
