When I grew up in Pennsylvania we would go to the meadow and cut tea. It looked very much like your spearmint leaves but it had a blue/purple looking stem. My grand parents called it blue balsam tea. It was delicious. These days no one knows what I am talking about, do you have any idea what kind it is?

Hi Sarah. Thank you for this herb video. My sister gave me a great tip for freeze drying herbs. If you lightly chop them in your food processor, you can fit so much more on your freeze dryer trays! It has made huge difference in the amount of herbs I can dry at one time.
Just an old trucker trick, if you put a twist in those straps on the green house they wont flop as much. Truckers do it because that motion in the straps will cut the strap. Love you guys thanks for the videos!

We just sent our FD back due to problems. Have had it for almost a full year and so many problems. Did a bunch of trouble shooting till I'm done with it. So FedEx picked it up yesterday. Hope they just send a new. Was so excited to get one, but man what a pain. Praying I can get on track with ALL the FD work ahead. Thanks for sharing. God bless and protect.
Thank you, Sarah, for this wonderful presentation! I have dried herbs in the traditional way without mechanical means in the past. BUT freeze-drying them will be my go-to now. Our small church has purchased a medium freeze-dryer for anyone in the fellowship to use. I suggest other fellowships consider such a purchase. We can help each other with preserving food!
Sarah, I am in zone 6B. For the last 3 years I have cut my stevia back hard in the fall, potted it up and brought in in the house for winter. After the May frost I replant them (3 plants) back out in the garden. They come back beautifully and I too harvest and preserve them. I usually dehydrate and use fresh but thanks for the freeze dry info, I’ll do that this year. Many blessings to you and your family.

I have flat leaf Parsley, Greek Oregano, and Chives. Dried my Oregano by cutting it and tying together and hanging upside down from my ceiling. In the kitchen is a window with a screen in the ceiling. Wrapped the string from the little dohickies that hold the screen on. Chives freeze. Parsley stays year round in the garden. 😊

When I have two items on the same tray, I make a separator out of parchment paper; folding it in half, then folding two flaps to go under the edges of the food. I fold it so that the it stands up no higher than the tray.
That harvest is such a blessing for you! I have added dried stevia leaves to my tea just the way you have them. I have also dried some as an addition to my own greens powder I made. Thanks for sharing this great info!❤

I bet your kitchen smells fantastic! Especially after doing mint and anise hyssop, I grow both as perennials, your's are doing great. I picked a few sprigs of catnip yesterday to make my neighbors cat very happy. I have a few plants that I wanted to use since they came up in the driveway and I will be mowing soon. I'm going to be starting some vinegar today since I realized I still have a bunch of apples that are starting to not look as fresh as I'd like them to be for eating 😊

Have you guys considered using a vacuum chamber system for preserving? I used to us the food saver sealers for a long time but I got a chamber vac. and it is the bee's knees, the cat's meow (you get the idea). I can even vacuum seal pint and quart jars in it.
I recntly got one of those little jar sealers and I absolutely love it. You don't have to pull out the big machine and deal with hoses, etc. You should look into a chamber vacuum sealer so you can vacuum seal mylar bags to remove more oxygen from the bags. I still use the plastic bags but only for freezing.
You can also prepare fresh salad, sans dressing or anything too wet like tomatoes, and use the sealer on those and have salad prepped for the week in the fridge to take to work and such.
Hi Kevin and Sarah, this is off topic, but I wanted to ask if you have recently ordered any of the plastic weed cloth you recommend for gardens. I followed your link from your video about never pulling weeds again and ordered two rolls of the mil. you recommended. After a week or so, we had lots of grass growing up through ours. (We had covered the area with black plastic over the fall and winter to kill the grass and weeds.) Either the place you linked to had switched to a lesser quality product or it is just no match for Bermuda Grass. I pulled a lot of grass out again yesterday through the weed cloth and lots of mulch which I guess is causing holes, ugh! Just curious if you ordered recently and had any problems. Enjoyed the video today. You were one of the people who helped me decide to buy a Freeze Dryer and I love it. My hubby gets a kick out of watching me work with it 😊. Happy Mother's Day, Sarah!
