- The simple and tasty way to make healthy scalloped potatoes.
Scalloped Potatoes
1 c raw cashews*
1 c water*
1 ½ tbs cornstarch
½ tsp garlic powder
1 ½ tsp onion powder
2 tsp salt
8 medium potatoes, peeled and sliced (approx 6-8 cups)
1 onion, sliced or 2 tsp onion powder
Place potatoes in a 9 x 13 sprayed pan. Place first 4 ingredients into a blender blend until VERY smooth. Pour over potatoes. Add 2-3 cups additional water (can use to rinse out blender) and pour over potatoes. The potatoes should be covered with liquid. Stir. Bake uncovered at 350 for 1 hour. Enjoy!
This can also be put into a crock pot on mediun-high for 8-9 hours.
*You you are needing to avoid nuts, you can use 1can full fat coconut milk in place of the nuts and water OR you can use 1 c canned coconut milk with 1 c water and 2 tbs white rice flour or cornstarch - Навчання та стиль
