I made this for dinner tonight! I had to substitute Parmesan with sharp cheddar because my kids and husband don’t like Parmesan. The potatoes were soft yet crispy and perfectly salty. We’re definitely going to be making this dish again! Thank you for posting this video!

Chitting is setting your seed potatoes in indirect light to let the "eyes" get a head start growing before planting out your potatoes. There are early to late varieties of potatoes, so growth time varies but potatoes planted in spring are ready for harvest August to October. After your initial investment to purchase your first seed potatoes, you just save your favourite varieties of smaller potatoes you've harvested for next year's seed. Egg sized potatoes are perfect for seed potatoes. Set them to chit next spring in old egg cartons! By growing your own you can try unique varieties that may not be available or be quite expensive where you live. I grew 5 varieties this season. I grew 'All Blue' as my exotic choice and "Alta Blush" as my unique choice. Neither are grown commercially around here.

It is. I've done this with a mixture of garlic butter + grated cheddar and mozzarella cheese on part baked french stick. It makes the best garlic/ cheese bread ever, (and you can use wholemeal bread so you feel less guilty about it 😄)

@@matthewcardoza1190 I boiled the potatoes to where a fork with some pressure applied could go through the potatoes. Don't boil until the potatoes are too soft.
A good way to improve this would be to par boil them a little. Then once cooled down to leave them in the fridge overnight on the cooling rack to let the cool/dry air get around them making them super soft in the middle and ultra crispy on the outside.
I agree, however that step requires preparation the night before. There's a place for both versions. I'm sure this one is good, although your way will yield a better final product

Made exactly as recommended. Great! Whole family loved it. Crispy crust on the outside, super tender on the inside. Be sure to use smaller potatoes so you don’t have to parboil as someone suggested. Completely not necessary.

I melted the butter, but I think "softened" butter would have looked more like the video.
