Having gone through Bookly demo it ticks all boxes for me but I am much worried about having around 14 different Bookly plugins (add-ons) to run my booking system. My wordpress already have 11 plugins outwith Bookly. This is a real concern. Is there any way around to eliminate this hurdle and this is the only reason until now it is stopping me from implementing Bookly.

Thanks for reaching out.
On most sites, it usually takes less than a second to go to each step. Our dev team is constantly working to make the Bookly plugin fast and optimized. However, the transition to the next step of the booking form is related to queries to the WordPress database. And ultimately, the speed of work depends on the performance of your server, the current server load, the WordPress theme, and the number of plugins installed on your site.
It's ideal to check how many resources do you have on your server, i.e.: CPU, memory and etc. If needed, you can try increasing the WordPress memory limit www.wpbeginner.com/wp-tutorials/fix-wordpress-memory-exhausted-error-increase-php-memory/, disable all unused WordPress plugins, and contacting your hosting provider to increase the server capacity.
As for Bookly, you should be able to only load all the Bookly scripts on the page where the appointments are booked by choosing the 'Method to include Bookly JavaScript and CSS files on the page' in the "Bookly > Settings > General" section to 'Print'.
With the "Enqueue" method the JavaScript and CSS files of Bookly will be included on all pages of your website. This method should work with all themes. Although the "Print" method may not work with all themes, the files will be included only on the pages which contain the Bookly booking form.
