Great question! Not all flowers hold their color as well as others. We have a list of flowers we recommend for drying here: www.johnnyseeds.com/featured/ideal-for-drying-and-crafts/ You could use the methods outlined in this video to try and dry other flowers you are interested in.
That can depend on the flower and flower care! They usually last quite a long time if properly dried. Dried flowers do lose color the more direct sunlight that they are exposed to.
Our barn loft is insulated but it certainly does freeze! In our experience, the flowers will hold as long as they are completely dried before freezing weather. Simply mix 1 part glycering with 2 parts water in a vase. Put stems in the vase and allow them to absorb the glycerin solution. Experiment to see which flowers work best with glycerin. I would try roses, chrysanthemums, dahlias, lavender, and statice, as well as bells of Ireland, eucalyptus, and many other foliage types.
