Chasing the "Eureka Moment": kind of interesting that what's really driving your description here is the player's engagement with the game, not the puzzle itself. The fundamental is the desire for a breakthrough, not the breakthrough itself.
Also regarding the starving restaurant: you really can sort of get away with a bit of this. The classic for me if when you have the dark cave that you know you need the lantern/torch to explore, or even the giant door that needs the big key, as long as there aren't too many of these. It feels sort of like getting a metroidvania upgrade, where you have this immediate spike of excitement 'cause you're about to get some cool new stuff to explore. Something as mundane as getting the matches towards the end of the colonel's bequest I thought was very exciting.

Yeah, that example with the dark cave is a good puzzle because it's a natural barrier, and has a very clear player goal. You'll know when you have the item to solve it. And despite "use torch on dark cave" being super obvious, I agree it gives you that excitement of "I can finally see what's in there!". I reckon that's best when its not puzzle difficulty preventing you from opening it, its just that there's more cool stuff that's happening in the meantime. So ideally gives the feeling of the eureka moment without the pain

As someone who has played a lot of adventure games what are your all time favourites?

Sam and Max I've replayed a few times recently with my kid, still so good. Monkey 1 I think is likely the best designed ever. For nostalgia feels Hero's Quest/QfG4 and maybe Space Quest 3 I enjoy replaying the most. For modern ones, Technobabylon and the Blackwell games stand out. Really looking forward to hobs barrow, Cloak and Dagger make great stories.
