I have two of these little beauty's!!! Like you, i have renewed the key mechanics clutch ,gear box, shocks, bushes etc so much fun to drive. If you get another car i will un subscribe 😂
You'll have to give me some tips on the bushes and gearbox if mine ever goes and don't worry the fiestas not going anywhere so long as the engine keeps ticking 😅🤞🏼

For the rust, use a wire brush or sandpaper to clean it off, then use some hammerite kurust and paint that. You probably don't want to underseal directly on any surface rust.
Check the forward part of the rear arches as there is a ledge where it meets the sill, and have a look under the carpet in the boot / under the car where the grommets for the wires go through, and I found this to be quite rusty and bubbling on both sides on my 2010.

my honest opinion would be that you'd be better off with a K&N Filter for the stock air box. I just do fun experimental stuff for the purpose of UA-cam 😅
A good car for you to get would be in my opinion a Skoda Fabia vrs which im pretty sure will give you everything you want in a second car as you mentioned.
Hadn't thought about those definitely one to consider 🤔

if I remember correctly you pop the top part off undo a bolt then the rest is clips 😁🫡
