How To Make Butter Chicken At Home | The Creamiest Butter Chicken

  • Butter Chicken or Murgh makhani is a delicious smooth curry with juicy and tender chicken. Richness comes from butter and cream, and bold flavors from unique blend of spices. It may vary from place to place, this is a quick and easy recipe of butter chicken to make at home. Enjoy!
    INGREDIENTS
    For Chicken Marinade:
    • Yogurt - 1/4 Cup (60 ml)
    • Cumin (ground) - 1 teaspoon
    • Coriander (ground) - 1 teaspoon
    • Turmeric Powder - 1/2 teaspoon
    • Red / Kashmiri Chilli (ground) - to taste (3/4 teaspoon)
    • Garam Masala (ground) - 1/2 teaspoon
    • Salt - to taste ( 1/2 teaspoon)
    • Ginger & Garlic paste - 1 Tablespoon
    • Lemon juice - 2 Tablespoons
    • Chicken Boneless Breast or thigh - 500 grams (cut into cubes)
    • Butter (lightly salted) - 2 Tablespoons (28 grams)
    • Vegetable Oil - 1 Tablespoon (15ml)
    For Gravy:
    • Butter (lightly salted) - 1 Tbsp. (14 g) + 2 Tbsps. (28g), divided
    • Vegetable Oil - 1 Tablespoon (15ml)
    • Black Cardamom - 1 pod
    • Cinnamon stick - 1 small piece
    • Cumin seeds - 1/2 teaspoon
    • Cloves - 2 to 3
    • Bay Leaf - 1 to 2 (small size)
    • Ginger & Garlic paste - 1 Tablespoon
    • Green Chilli (chopped) - 1 to 2 medium size
    • Cashew (unsalted) - 3 Tablespoons (approx. 30 grams)
    • Onion (chopped) - 1 Cup (100 grams)
    • Cumin (ground) - 1/2 teaspoon
    • Coriander (ground) - 1/2 teaspoon
    • Turmeric Powder - 1/2 teaspoon
    • Red / Kashmiri Chilli (ground) - to taste (or 1 tsp)
    • Nutmeg (ground) - 1/2 teaspoon
    • Garam Masala (ground) - 1/2 + 1/4 teaspoon, (divided)
    • Salt - to taste (1/2 teaspoon)
    • Sugar - 1 Tablespoon
    • Tomatoes (blended) - 1 1/2 Cup (approx. 400 grams)
    • Milk - 1/4 Cup (60 ml) + 1/4 Cup (60 ml), divided
    • Cream - 1/4 Cup (60 ml)
    • Dried Fenugreek Leaves / Kasuri Methi - 1 teaspoon
    For Garnish:
    • Dried Fenugreek Leaves / Kasuri Methi - 1/4 teaspoon
    • Coriander Leaves (chopped) - 1 Tbsp (fresh) OR 1/2 tsp (dried)
    • Cream - 1 Tablespoon
    • Butter - 1/2 Tablespoon (7g)
    METHOD
    For Chicken:
    1. Whisk together yogurt, spices, ginger & garlic paste and lemon juice until combined. Add chicken pieces and mix well to coat. Cover and leave it to marinate in refrigerator for at least 1 to 2 hours, (preferably overnight).
    2. Heat oil and butter in a pan on medium heat. Cook chicken until done and water is dried. Remove from pan and set aside. (for cooking in oven see notes)
    For Gravy:
    1. In a deep pan on medium heat, add 1 Tbsp butter and 1 Tbsp oil.
    2. Add cardamom, cinnamon stick, cinnamon stick, cumin seeds, cloves and bay leaves and sauté for 1 minute or until fragrant.
    3. Add ginger & garlic paste, green chillies and sauté for 1 to 2 minutes.
    4. Add cashew and fry for 1 to 2 minutes.
    5. Add chopped onion and cook until onion is translucent.
    6. Now Add ground cumin, coriander, turmeric, red chilli / Kashmiri chilli, nutmeg, garam masala 1/2, salt and sugar and fry for 2 minutes while keep stirring. (You can add a splash of water to stop spices from burning).
    7. Add blended tomatoes and stir well and let it cook for 2 minutes. Then cover pan with lid, and keep it on simmer on low heat for 5 to 10 minutes.
    8. Transfer tomato mixture into a blender. Add 1/4 Cup of milk and make a smooth puree.
    9. Strain blended mixture through a fine sieve, transfer into pan.
    10. Put pan on stove and heat gravy. Add 1/4 cup of milk and 2 Tbsp of butter and stir to combine.
    11. Add cooked chicken and stir until mixed.
    12. Add cream and stir to combine.
    13. Add 1 tsp fenugreek leaves and 1/4 tsp garam masala and stir to combine. Cover the pan with lid and simmer on low heat for 5 to 10 minutes.
    14. Transfer into serving bowl, garnish with 1 Tbsp cream, 1/2 Tbsp butter and coriander leaves.
    15. Serve with naan.
    NOTES
    You can also cook chicken in oven; thread chicken onto skewers and arrange on a wire rack and put a baking tray underneath to catch drips. Grill/ broil for 7-8 minutes, turn skewers then cook for another 6 - 7 minutes or until chicken is cooked.
