Mayo isn't weird for grilled cheese, its just an egg emulsion but its 70 - 80% fat from the oil. It's about the same as using any other fat or oil besides butter.
A lot of mayo has a decent amount of vinegar in it that throws the taste off for me. If it's just like other oils, and ease is the point, I'd rather use olive oil.

I am glad you took a stance. There are too many mayo apologists online. How is raw egg in oil in any way appealing? no form of mayo should be allowed to exist. I think the FDA should ban all mayo and aioli products.
