Great recipe looks delicious. Another tip for peeling the chiles after they've been sweated, you can use a napkin to rub off the skin. Just be gentle of course since you don't want tear the chiles. Also you can add some champiñones or hongos aka mushrooms to the dish. If you want to add a little spice, roast a jalapeño with the poblanos and add that too. My mom used to make this with monterrey jack cheese and mozzarella and New Mexican green chiles (people now call them Hatch chiles, but we used to call them by their varieties, ie: Joe Parker or Big Jim varieties. The chiles are different and were cultivated based on the heat level, flavor and the thickness of the flesh). I’m so fortunate that we can now find more varieties of melting cheese, so I use a shredded Chihuahua menonita, manchego, Asiago/quesadilla or Oaxaca. Choriqueso with homemade tortillas and pico or salsa… omg, yummmm!

It’s called a comal. They sell them at Mexican markets.
