  • This Cajun New Orleans style dirty rice recipe is the BEST. It was soooo good, we had it for 3 meals. I used ground beef and chicken livers but you can use sausage and chicken hearts or gizzards. Love all the cajun flavors. You can serve this as a side dish or a meal. Enjoy.

    How To Make Cajun Dirty Rice
    INGREDIENTS:
    4 cups cooked rice
    1/2 pound ground beef
    1/2 pound chopped chicken livers
    1 small finely diced onion - about 3/4 cup
    1/2 cup finely diced celery
    1/2 cup finely diced green bell pepper
    1/2 to 3/4 cup water or chicken broth
    2-3 cloves minced garlic
    1 tsp. Adobo seasoning
    1/4 tsp. black pepper
    1/4 tsp. onion powder
    1/4 tsp. savory
    1/4 tsp. thyme
    1/8 tsp. cayenne pepper - optional
    1 tbsp. cajun seasoning
    1 tbsp. Worcestershire sauce
    1/4 cup fresh chopped parsley
    3 tbsp. butter
    In a skillet on medium heat add butter, onions, celery, bell peppers
    and salt. Cook and stir for about 5 minutes or until veggies are tender.
    Add minced garlic. Cook and stir for a minute.
    Add ground beef and chopped chicken livers. Cook and stir until meat is no longer pink.
    Add seasonings and cook and stir for one minute.
    Add water and Worcestershire sauce. Cook and stir for one minute.
    Add fresh chopped parsley and rice.
    Cook and stir for 3-4 minutes or until combined and rice heated through.
    Taste for seasonings.

      Tess Cooks 4u: I knew Thomas Kincaide (r.i.p.) at the mall in Seattle. He actually told me to bourbon chicken with dirty rice instead of all that vegetable foods. It took me a while to try it, but did. It’s a fantastic meal. Nice video

      The three things celery bell pepper and onion are not called a mirepoix they are called The Holy Trinity if you're going to cook Cajun know the terminology

    Been thru 30 videos this the first one that used the liver, finally somebody who knows. Dirty rice with no liver is just fried rice lol. Even seen one with soy sauce.

    As a Cajun, this is done pretty well. I would use a little ground pork instead of sausage, then it would be spot on. Good job Tess.

      Would ground beef and ground pork be a good choice of meat instead of any liver and gizzards? Also, any recommendations on Cajun seasoning? Thanks

      To tone down the metallic taste of the livers cook them first then freeze them . For some reason the bitter taste of the liver seems to tone down making the dish taste more authentic.

    I made this and it was absolutely delicious but I think 4 cups of rice is too much next time I’ll only make 2 cups of rice .

    Only thing missing was using chicken stock instead of water and adding chopped green onions..😁

    Tess, I so needed this recipe a month ago! I was looking all over for a good recipe and ended up mixing several where I used livers and gizzards. My gizzards were so tough, though, but that was my first time cooking with them. Will try something else next time to tenderize them suckers. I didn't add Cajun seasoning to mine, but will definitely try your recipe next time since my first try wasn't such a success. Thanks for sharing!

    You said that your Cajun seasoning was not spicy, I cannot handle spicy heat very well, would you mind sharing what brand of Cajun seasoning you used? I would love to find one that was not spicy.

    Your recipe looks pretty good....Anemia is something I deal with, & I know some sort of liver would be good for me....but I cannot eat beef liver; I've tried maybe 4-5 times in my whole life, but even with onions & being cooked til really tender, it still tastes like dirt in my mouth, & like dried blood. Hahaha! ....so I was looking into Popeyes cajun rice; it looks like a version of a 'dirty rice' but w/o chicken livers, which I have no problem with, but if I could possibly eat chicken livers, I would feel pretty good about it. I'd be getting a good source of iron, B12, other B-vitamins, too. ( I like to get my nutrients from food, if possible, instead of supplements.) THANKS for your recipe!

    Looks delicious. If I want it as a side dish, what do you suggest to go with it? Since it has the meat and starch, I was thinking steamed broccoli and cauliflower blend.
