- Today, I tried recreating Levain Bakery’s Dark Chocolate Chocolate Chip Cookie. No need to fly to NY City to experience this amazing cookie.
Head on to your kitchen and whip up these intensely dark, chunky and gooey chocolate chip cookies.
RECIPE:
200 g | 1 5/8 cups all purpose flour
100 g | 1 cup cake flour
1 tsp baking powder
1 tsp cornstarch
3/4 tsp baking soda
1/2 tsp salt
50 g | 1/2 cup cocoa powder
200 g | 7/8 cup cold butter
130 g | 2/3 cup brown sugar
70 g | 1/3 cup white sugar
2 eggs
250 g | 1 1/2 cup dark chocolate chips

These look so amazing i made them today followed the directions to a "T" but my dough was not as doughy. Can I ask are you compacting the brown sugar or loose brown sugar?

These are so good, ythank you so much! One question: my cookies came out a little rounder and taller than yours. Yours are a little shorter and have a bit more ridges and texture. Any idea why?

Thanks for your comment! Usually cookies will flatten/ shrink a bit after baking. It is probably how you shape the cookie dough before baking or your refrigerator/ chiller runs cold so the cookie dough is a little harder compared to mine.
Hi! I made these today. They were so yummy! Sarap! I just have one question po. Do you bake the cookie dough that's freshly removed from the chiller? Or you take it out muna for a few minutes from the chiller then bake? Thanks!
I am happy to hear that. I bake them straight out of the chiller/ fridge. You want the cookie dough to be nice and hard before baking to lessen the spread while baking.

Hi, yes the texture should be a little crispy on the edges and soft and moist in the center.

Hello, I haven’t tried baking it that small. But you can try baking it for 8 mins. Then check if the surface of the cookie is dry. You want it a little underdone in the middle coz it will continue baking in the pan. Hope that helps. 😊

hi, thanks for your comment. If you want them to be flatter, you don’t need to chill the cookie dough or chill it for less time.

Can I use bread flour and cake? Instead of allpflour?
Bread flour contains more gluten and with that the cookie will turn a bit chewy. Levain cookies tend to be more on the cakey inside.
After chilling overnight, do I still need to wait minutes before I bake it?

Hi, you can make cake flour by using all purpose flour. For every 1 cup of apf remove 2 Tbsp then add 2 Tbsp of cornstarch, you now have 1 cup of cake flour.

Hi, mga 10-15 minutes to make sure nareach na ang 400 F or 205 C na temperature. Kung meron kang oven thermometer, mas okay pra accurate.

Can I use Melted butter instead?
Bruni Sicat Hi, sorry but you have to use cold butter in this recipe. Cold butter is needed to get that chunky cookie. But if you want to use melted butter, you can. However, the cookie will not be as chuncky as the Levain cookie.
You can just freeze your cookie dough before scooping and few minutes before you put it on the oven.

1 cup of APF - 2 Tbsp (APF) + 2 Tbsp cornstarch = 1 cup cake flour
