I'm not sure if I understand your question, but monitors that are advertised as 120 Hz don't need the emulator as they have the hardware to display 120 Hz. So, no a 120 Hz monitor doesn't need a emulator. However, a 60 Hz monitor with a emulator may trick the PS5 into outputting 120 FPS and is worth a shot if buying a new monitor isn't reasonable. However, there are mixed results in the emulator working and not working, so keep that in mind.

Short answer is no. This is because when playing on 120 FPS that in literal terms means that one whole picture or in this case one frame is being completed by your PS5 every 8.33 milliseconds (I got 8.33 milliseconds by dividing one second by the amount of hertz to get the time it takes for one frame to finish 1 ÷ 120 = 8.33) and is then pushed out to your monitor. Let's say you even used a 240 Hz monitor where that means it will attempt to display something new every 4.16 milliseconds. When there is nothing to display or get from your PS5 it will just display the pervious frame again. Since it's 240 Hz it's going to display every frame twice or half new and half old if the PS5 version of vsync isn't enabled (Forgot the name of the setting in the PS5 that enables the syncing of frames with hertz). when it's something in the middle like 144 Hz 7 milliseconds or 165 Hz 6 milliseconds like you suggested it will display a portion of the new frame with a portion of the old frame all the time in varying amounts causing screen tearing that is more ugly looking. Instead of the tear being clean down the middle it will be near the top or near the bottom and not very often in the middle of the screen where more useful information is present such as tracking an enemy. Hope this makes sense.
If you're asking how to change the monitor settings then you're gonna have to look at your own monitor as every monitor has different settings. I'm pretty sure there's a video that show's all the different settings of your monitor if you searched up your monitor.
It's a hit or miss for the edid adapter as some people have indicated in their own personal tests. As for the rest of the settings, since your TV is 60 Hz I don't think 120 FPS will work on your setup in it's current specifications.
I used a monitor and switched between 240 Hz to 60 Hz and 120 FPS worked even switched to 60 Hz. I'll do a follow up video with a more detailed explanation on how to set it up.
The PS5 only does 120 FPS for 1080p and sometimes 1440p and 4K is either 60 or 30 FPS. The EDID adapter may just be the trick for you to get 120 FPS on 1080p and sometimes 1440p, but as other people have voiced overwise that the adapter just made their screen go black and nothing came on screen.
It might have to something with your display whether it's a TV or Monitor. Some displays just refuse to allow 120 Hz cause it's not in it's supported frequency despite by passing it with the edid adapter.

My monitor is 240Hz and I actually use the HDMI from my PS4 and it let's me use 120 FPS mode in Fortnite, so I didn't see the reason to change it.

If you're asking how to change the monitor settings then you're gonna have to look at your own monitor as every monitor has different settings. I'm pretty sure there's a video that show's all the different settings of your monitor if you searched up your monitor.
