Hello. I am new to your channel and I will be using your recipe for lace cookies. I was wondering once they come out of the oven will I be able to mold them into a shape as long as they’re still warm or will they just maintain a regular circle?
I would say they'd be good for up to a week in an air tight container. Humidity can mess with them since they are basically a candy. You'll want to separate layers with parchment paper to keep them from sticking. :)

Hi Sam. Because you can only cook a few at a time, what do you do with the rest of the batter? Does it stay soft so it is ready when these come out? I tried them and they spread to one big cookies. I think they were too big. Lol. I thought I had to put bigger so they could all bake at the same time.
The batter will start to firm up, but it's not a big deal. Just leave it out and scoop it as you can. Make sure to not place them on a hot cookie sheet. They do spread A LOT so make sure to keep them at the 1.5 tsp sized scoops.
Hi Karen!! I like to use unsalted butter because it gives me much better control of the amount of salt used. That being said, you can use salted butter instead in just about all of my recipes. Tried many recipes. This combo turned out with great texture and baked very easily. The only difference is I was using minced ginger and no almonds
