Once had mushrooms with Seville orange balsamic vinegar olive oil and hard cheese not sure if this was Spanish dish but was served this from friend in Barcelona

Your Manchego paste looked delicious. Loved the roasted mushrooms in picadillo sauce-beautiful! The last ones with pimenton was heavenly. Mrs Rivet would love each every version!
Actually the olive oil I used and recommended here is a Spanish olive oil, not Californian :) though I love California olive oils, thanks for the comment brother :) much love
Very important video :) Tapas is newish in Australia and the invention and techniques you bring to the screen make winning easy. There's also the stuff you do that you don't speak of; I noticed the smoke at 10m30s implying you sometimes work with a very hot pan, (but once you've achieved what you need; you are equally quick to get the food into a serving dish) another great video. I subscribed long ago so there we have it............ please keep up the great work :)

Oh my. All of these mushroom dishes sound so delicious. I will definitely try them, except the one you cook in the oven because I don't have an oven 😢. I wish you would cook more things that can be cooked on the stovetop. Everything you make looks so good and very easy to cook. I don't know how I found your site, it just seemed to pop up. I'm so glad though. I am an avid Mark Wiens fan but I think you are my favorite now because you show how to make everything and you make it so easy. Sometimes I add Italian breadcrumbs to my stuffed mushrooms, but that changes the nationality of the dish. And to quote Steve Martin (maybe. It was the 70's), "The girls call me Mushroom...because I'm such a Fungi!".
Do not wash mushrooms with water. Removes flavor. Brush with a soft brush or chamois to remove dirt. Mince garlic finely if not going to cook or it'll be bitter. These are commercials. To learn to cook via video try Saragusea, Jeremy at Wok School Convent Garden, or something else because this is sub-amateur.
