    Ingredients:
    For the Dough:
    3 cups All-Purpose Flour (Approx. 475g)
    1¼ tsp Salt
    2 tbsp Sugar
    2½ tbsp Cooking Oil
    1 cup + 1 tbsp Warm Water
    For the Filling:
    1 Medium Onion, thinly sliced
    3 Green Chilies, finely chopped
    Salt, to taste
    Lime Juice, to taste
    Other Ingredients:
    Cooking Oil, for frying and greasing
    1 Egg per roll
    Chaat Masala, to taste
    Ketchup
    Green Chili Sauce
    Instructions:
    Prepare the Dough:
    In a large bowl, combine flour, salt, and sugar. Mix well.
    Make a well in the center, add cooking oil and warm water.
    Mix using hands, then knead into a smooth dough. Punch down with fists during kneading for elasticity.
    Grease the dough lightly with oil, cover, and let it rest for 1 hour.
    Prepare the Onion Mixture:
    In a small bowl, mix thinly sliced onions, chopped green chilies, a pinch of salt, and a few drops of lime juice. Set aside.
    Shape the Dough:
    After resting, divide the dough into 5-6 equal balls.
    Grease each ball slightly with oil, cover, and let rest.
    Roll each ball into a thin disk. Spread a bit of oil and sprinkle flour over the disk.
    Cut from the center to the edge, roll from the cut side into a cone shape. Now, using a gentle pressure from the top, start twisting the cone in a counterclockwise motion. This motion spreads the cone’s base while the tip stays at the center, effectively layering the dough as it flattens. Make sure to press down gently to avoid tearing. seal the edges at the end with fingers, and flatten it slightly. Let rest for another 10-15 minutes, covered.
    Cook the Paratha:
    Heat a tawa or skillet over medium-high heat. Place the rolled-out dough and cook until it starts to dry up.
    Drizzle some oil around the paratha, let it fry until lightly golden.
    Add the Egg:
    In a bowl, beat an egg with a pinch of salt.
    Remove the paratha from the skillet momentarily, add a bit of oil, then pour the egg mixture onto the skillet.
    Quickly place the paratha back on top, allowing the egg to cook slightly on the bottom.
    Assemble the Roll:
    Transfer the egg-coated paratha to a cutting board.
    Sprinkle chaat masala, spread the prepared onion mixture, drizzle ketchup, green chili sauce, and a few more drops of lime juice.
    Roll and Serve:
    Carefully roll the paratha with all the fillings inside. Serve hot and enjoy your Kolkata Egg Roll!

    Don't use newspaper to wrap roll. Even at the roadside roll centre in Kolkata, it is not utilised.

    The roti is too big. Should make it with half size dough ball. That tastes better. Otherwise it's just chewy and you can't taste the egg at all.
