It's a great tool and goes well with other cooking methods. Do yourself a favor: when you get the unit, set it to 185F/85C, dice some carrots and potatoes, add them with some butter, salt and herbs to the bag and sous vide for an hour. Try it and come back here to tell me if that weren't the simplest yet best veggies you ever had (and I am no fan of veggies *g*).

Old cow is good!
I was skeptical the first time I heard about it. But it's so tender and so flavorful ... amazing.
Here in Spain it's called vaca vieja. It's race, age, food and shelter.
If I am not mistaken, the old cow has its origins in Spain ... and yes, it's not just any old cow :-)
